Pizzelles III

First time making pizzelles. My 13 year old daughter and I used grandma's electric maker, with this recipe, for Heritage Foods Night with her youth group. Realized we didn't have anise oil and used 1tsp of almond extract and 1tsp of vanilla. Followed the directions and tested cooking time with our maker (45 seconds). Very flavorful and crisp results. One note, the batter was almost a frosting like consistency. Not sure if that was correct, but the outcome was a winner. Now my daughter wants to make them again for her birthday next month. She's planning on making pizzelle ice cream sandwiches.

Unstuffed Cabbage Roll

Waffles I

Lemon Meringue Pie III

Just made two for our chruch bake sale. Custard tasted great before adding the meringue and even better with it. Sweet and tart tasting. I must have purchased shallow pie crusts, because I had over 1 1/2 cups of the custard left over. Using a box of premaded tartlet shells, I made a dozen more mini lemon merinque pie tartlets. Made the Lemnon Merinque Pie II on this web-site last week for a birthday pie gift. Very unhappy with that recipe and it's results. Lemon Merinque III is the perfect recipe for a lemon reminque pie in my opinion.

Sugar Cookie Icing

Wonderful icing. Middled aged lady finally finds the icing recipe she's been looking for all her life! Just made tulip sugar cookies and used this icing to color them alternatly red and yellow. Light sheen, drys nicely and was able to paint green (stem) frosting over the dried red or yellow "petals" and the color covered nicely.

Lemon Meringue Pie II

Had problems form the beginning. Cornstarch and water didn't make a paste. It was very watery, so I added more cornstarch. The overall flavor of the mixture in the double boiler was sweet, watery and not very lemony. Added another egg and about 1/4 cup of lemon juice. Ended up having way too much "custard" and it didn't thicken well in the double boiler. Cooked the pie first without the merinque topping. Once it cooked for about 12-14 mins I added the merinque topping. Once finshed it was custardy and the lemony flavored meringue was good, but very sweet. Needed to make two pies this morning for a back sale tommorrow and chose the Lemon Merinque Pie III Recipe. Much better results.

Lamb Barley Soup

Used one pound of ground sirloin and one pound ground lamb. Omitted the beans as they don't agree with my digestion. Family loved it so much, that I have made it twice in a month.

Margaret's Keftedes (Greek Meatballs)

Used 2 tsp of chopped fresh mint instead of the dried. Loved the way the strong flavor of the lamb was diluted with the beef. Wonderful. Will make again and again.

Eggplant Snack Sticks

Loved these, but tweaked them using a gluten free mix of crushed Glutino crackers and rice Chex cereal. Used egg and almond milk for the liquid to dip the eggplant strips in. Loved them. Loved them. Will make again and again.

Marinated Rib Eyes
