About this Cook
My wife and I met back in 2002 in London, England while on vacation. We both signed up for the same college spring break trip...turns out we lived 30 miles from each other! We got married in 2010 and have two lovely (and spoiled) bulldogs. They are our kids! Love cooking for family & friends...and making everything from scratch is important to me.
My favorite things to cook
Name it! ha! I love cooking pasta and experiementing with different sauces. Grilling/smoking anything is really high on my list.
My favorite family cooking traditions
Family secret! Well should be used as guides. Change it up to suit your taste and to suit your mood. Cook from the heart!
My cooking triumphs
Making a 4-course (appetizer, meal, dessert & drinks) from scratch for MY birthday for a total of 12 people. I loved it!
My cooking tragedies
First time I made gumbo and dirty rice. Both were NOT good. Sad Times.

Caesar Salad Croutons
Great recipe but I did change it up the second time…and I’ll never go back to the original. I used 1 stick of melted butter…to the butter I added a tbsp. olive oil and the garlic. Put all the cubed sourdough bread in a large mixing bowl and slowly pour the butter mixture over the bread, be sure to mix the bread while doing so to ensure all the bread is covered. Once it’s all covered, I lightly sprinkled McCormick’s California Style Garlic Salt & Garlic Pepper on the bread…only put as much as your personal preference. Lay the final product out on a cookie sheet, one layer thick and bake in the oven at 350 F for 20 minutes…broil them for an additional minute or so…only toasting them to your preference. YUM!

Caesar Salad Supreme
This is a phenomenal salad and dressing. I finally got to use our wooden salad bowl we got as a wedding gift! My Suggestions…use premium parmesan cheese that you grated yourself. You’d be surprised at what a difference this really makes. I also prefer to use homemade mayonnaise…it’s easy to make if you have a good food processor or blender and it really makes for a GREAT dressing. Be sure to wash your lettuce completely first and pat dry (or let dry completely) then tear the lettuce to the preferred size. Don’t cut using a steel knife…if you have a lettuce porcelain knife then you can use it but tearing the lettuce really gives the salad some character and the lettuce lasts longer when torn…its proven! Ha! Thanks for sharing!

Rosemary Ranch Chicken Kabobs
I LOVE this ranch dressing mixture! I now use buttermilk ranch dip and apple cider vinegar instead of white...turns out PERFECT! I have used this dip for kabobs, grilled chicken breasts and made a batch just to dip the cooked chicken in! YUM!
