Finally, some summer weather! What a rainy, blah June it was here in Vernon. I probably shouldn't complain though because soon the temperatures will start to soar to 40 plus degrees C and I'll be wishing for the rain! Thank goodness for the awesome lakes the Okanagan has! I am a nurse and am the mother to 3 fantastic young boys and have been married to a great guy for the last 12 years.
My favorite things to cook
I enjoy trying new recipes. There are not many dishes that I repeat regularly. They have to be really special to get placed in the Family Favorites Scrapbook that I have created. I make a killer lasagna and I my chili is to die for (in my opinion). I also have a rather extensive cookbook collection that I have to regularly weed out due to space constrictions.
My favorite family cooking traditions
We live only a few blocks from my parents and we alternate each year who makes Thanksgiving and Christmas. Whoever does Thanksgiving has a rest for Christmas and vice versa.
My cooking tragedies
My husband broke the tip of my good Henkel's chef's knife trying to separate frozen sausages.

Horseradish Sauce
Pretty much tastes like the creamed horseradish you can buy in the store but much more fresh. Kick it up by using the hottest prepared horseradish you can find. I made this to serve with a standing rib roast and it was so delicious I added it to just about everything else short of ice cream after that. Hmmm, ice cream and horseradish? Interesting.....

Chicken Enchiladas II
Great recipe! I had already bought the ingredients before thinking that, yes, corn tortillas would be better. Still the enchiladas were flavorful and even held up the next day for lunch. I didn't find them spicy enough so next time I will add a freshly minced jalapeno to the sauce/filling. Thanks!

Foil Barbecued Trout with Wine
Very simple, moist and delicious. I added minced garlic to mine and, in addition to the (fresh) lemon juice, I added sliced lemon to the cavity. I wrapped my large rainbow trout in foil and baked it in the oven at 375 for about 40 minutes - doneness completely depends on the thickness of the fish, bake/grill until opaque in middle and fish flakes easily with fork. Very very delicious!
