Elizabeth's Extreme Chocolate Lover's Cake

This is a great recipe....but a little advice on the ganache and buttercream. The professional trick to a ganache cake is to ice it in buttercream first, then chill for about an hour. Make the ganache and pour it over the whole cake. You will get a very smooth effect that looks awesome. With as much ganache as this recipe makes, you could do two pours, resting about 5 minutes between each, and get a really good coating.

Creamed Spinach II

Very tasty and very easy to make. I did make a few changes...based on a few other reviews I added a little cream cheese to make it creamier. Also used fresh spinach since that is what i had on hand.

Stuffed Pork Roast with Herb Seasoned Artichoke and Mushroom Stuffing

Very original recipe. I happened to have a pork loin I needed a recipe for, this fit the bill perfectly. Very easy to make, flavorful stuffing. Only suggestions would be some sort of glaze or gravy for the meat because that was a little lacking in flavor.

Double Chocolate Brownie Cake

This was one of the best chocolate cake recipes I have ever had. Only addidtion I made was 2 tblsp of Kahlua for a little kick. Very moist and rich.

Ropa Vieja

This is my go to recipe when we can not decide what to have. Very rich and flavorful. I have made it in the oven and stovetop, the stovetop version comes out better for some reason.

Balsamic Roasted Pork Loin

I follwed this recipe to the note, and it came out perfect. In agreement with other reviewers, the quality of the balsalmic vinger makes all the difference. DELICIOUS, and looking forward to trying same marinade on chicken.
