I am happily married mother of 2 girls, Lauren (20 yrs) and Nevada (6 yrs). Cooking is the past time that brings me the most enjoyment, I love baking for others.
My favorite things to cook
Any type of baking - cookies, cakes, breads - are my favorite types of cooking. Experimenting with foods and meals of different cultures, anything that I was not exposed to growing up in the southern U.S.
My favorite family cooking traditions
With my family I have tried to build new traditions around holidays and special occasions. There are things that you grow up with in the south, like cornbread stuffing at Thanksgiving, or black-eyed peas, ham and greens on New Years. I like to keep those traditions but come up with new ones that incorporate my husbands greek heritage into our family.
My cooking triumphs
The biggest 2 accomplishments I am proud of would be learning how to make the perfect Carnitas and making bread by hand and learning it all on my own by trial and error. That, and the fact I make the worlds best SPECIAL chocolate chip cookies which my co-workers hound me for every week.
My cooking tragedies
For my mothers 50th birthday I decided to make my first cake from scratch....not a good was the most disgusting tasting pile of cake flour.

Spinach Enchiladas
I love spinach and I love enchiladas - so I was very excited to give this a try. Following the recipe exactly I found it to be seriously lacking in flavor. If I were to make this again I would definitely supplement with additional seasoning and possibly some mild green chilies.

Elizabeth's Extreme Chocolate Lover's Cake
This is a great recipe....but a little advice on the ganache and buttercream. The professional trick to a ganache cake is to ice it in buttercream first, then chill for about an hour. Make the ganache and pour it over the whole cake. You will get a very smooth effect that looks awesome. With as much ganache as this recipe makes, you could do two pours, resting about 5 minutes between each, and get a really good coating.

Creamed Spinach II
Very tasty and very easy to make. I did make a few changes...based on a few other reviews I added a little cream cheese to make it creamier. Also used fresh spinach since that is what i had on hand.
