West African Vegetable Stew

I had all of the appropriate veggies at home and wanted something new to do with them. This fit the bill perfectly! The only modification was to use 1 1/2 cups of Organic Vegetable broth as the liquid. Thank you for a unique and wonderful stew that will be made often!

Grandpa McAndrew's Irish Soda Bread

I discovered this recipe years ago and cannot tell you how many times I have baked it for my husband and friends (me, to!). My husband has spent time working in Ireland and finds this to be rather authentic. It is one of our favorite Sunday breakfast foods and for anytime we want a taste of Ireland. Thank you for another wonderful recipe!

Cranberry Couscous Salad

What a mouthful of happiness! I doubled the couscous and prepared it in chicken broth. I soaked the craisins and added diced celery. Since I was taking it to a potluck, I left out the nuts. I will definitely make it again and again! Thanks for a great recipe.

Turtle Cheesecake

I need more stars! This makes an awesome cake! My granddaughter, Gabi at 2 1/2 years old, and I made this last weekend for her mama's birthday. I studied the article, Baking Cheesecake, Step by Step in preparation for making it. I am happy to say that the cake turned out perfectly and looked very professional.

This is such a refreshing salad that enhances any meal. We put a Greek spin on it, adding black olives, chopped tomatoes and feta cheese. It was delightful with grilled salmon.

Spicy Stuffed Chicken Thighs

My daughter-in-love and I made this for dinner tonight. We accomodate my son, who is on a low salt diet. Sweet Barbara makes homemade no-salt turkey sausage that worked perfectly in this recipe. We used bottled fire-roasted red peppers, added garlic and asparagus. We served it with herb roasted new potatoes and a lovely spinach salad with raisins and pinons in balsamic vinegar and my homemade Ciabatta bread. Oh yes, and red wine. This recipe is a definite keeper! Thank you!

Fry Bread Tacos II

Thank you for a perfect recipe. It is quick, easy to prepare, with ingredients found in my pantry/freezer, and takes us back to New Mexico. There is nothing finer than Navajo Tacos and this may not be exactly the same, but certainly closer than I thought I could ever get! I am already plotting to make them again, with variations.
