Spicy Stuffed Chicken Thighs

My daughter-in-love and I made this for dinner tonight. We accomodate my son, who is on a low salt diet. Sweet Barbara makes homemade no-salt turkey sausage that worked perfectly in this recipe. We used bottled fire-roasted red peppers, added garlic and asparagus. We served it with herb roasted new potatoes and a lovely spinach salad with raisins and pinons in balsamic vinegar and my homemade Ciabatta bread. Oh yes, and red wine. This recipe is a definite keeper! Thank you!

Cranberry Couscous Salad

What a mouthful of happiness! I doubled the couscous and prepared it in chicken broth. I soaked the craisins and added diced celery. Since I was taking it to a potluck, I left out the nuts. I will definitely make it again and again! Thanks for a great recipe.

Grandpa McAndrew's Irish Soda Bread

I discovered this recipe years ago and cannot tell you how many times I have baked it for my husband and friends (me, to!). My husband has spent time working in Ireland and finds this to be rather authentic. It is one of our favorite Sunday breakfast foods and for anytime we want a taste of Ireland. Thank you for another wonderful recipe!

Mild Cheesy Chicken Enchiladas

Cheesy and Easy! I used a grocery store rotisserie chicken and shredded Mexican style four cheese. I also added a clove of garlic and small can of chopped jalapeno to the chicken mixture. I also was very generous with the amount of chopped tomatoes on top. I also skipped the step of warming the sour cream and cheese (saves a pot and time). Thanks for another winner of a meal!
