A yummy omelet without cheese? Yes, it’s possible!

As far as my quest to eat healthy goes, today started out well and went quickly downhill!
We awoke to almost 2 feet of snow at the jersey shore. I decided to make some energy food so we could tackle the driveway – an egg white omelet with lots of veggies. I started by microwaving orange, yellow and red peppers, and baby spinach leaves. I like veggies in my omelet to be soft, without frying them in oil.
Next, I separated four eggs and started scrambling them. I added the veggie mixture, but by this time it was more of an egg scramble than an omelet – oops! It still came out delicious – I topped it with diced tomatoes and avocado. We didn’t even miss the cheese – boyfriend was impressed!
I don’t know if it was the breakfast or the cold air, but I got such an adrenaline rush shoveling snow! We don’t get it too often, so it was fun to be outside and exercising in a nonconventional way.
It was also a great day to wrap up Christmas shopping – the stores were empty! Front row parking and no lines – on the Sunday before Christmas, imagine that! After a day at shopping we came home and made Ellio’s pizza – bad I know, but somehow fitting on this fun snow day!
I’m charging up my IPod for a great cardio session at the gym tomorrow. I’m also going to try an Acai berry protein shake at home – stay tuned, and stay warm!
