Salmon Cakes II

Incredible! Jeanie Bean, thank you so much for taking the time to post this recipe. My suggestions from making these several times and from other reviews: -check label to make sure canned salmon is boneless and skinless -use 10-12 crushed Ritz crackers in place of breadcrumbs -salt mixture lightly before forming into patties -bake at 375 for 15 minutes on a sprayed cookie sheet, then flip and bake another 10 minutes Baking somehow produced nicely browned cakes that were crispy on the outside and tender on the inside. With rice pilaf and sweet peas, this might be my husband's favorite meal. Thanks again for sharing!

Fluffy Pancakes

These should be called "Perfect Pancakes". Mixed exactly as directed, cooked on a 325° griddle and the very first batch turned out to be the best pancakes we've ever had. Not too fluffy, not too flat, not too doughy, not too dry. Perfect! Thank you for sharing this recipe, Kris!

Fluffy Pancakes

Excellent exactly as written. I double the recipe for our family of four. I've made them 52 times...every Saturday morning for one year! Mine are always perfect when I measure carefully (we don't like them as much when I reduce the salt) and cook them on my cheap, old (but fantastic) Presto griddle at 315°. 315° is a low-medium heat, but I find the pancakes turn out better when cooked at this lower heat. I sometimes replace half of the white flour with whole wheat flour. I prefer the slightly chewier texture, but my husband and kids like the all-white ones better. Thank you Eugene for sharing your family recipe! We are grateful that it's become our family recipe too!

Tofu Parmigiana

I am trying to reduce the amount of meat my family eats, but my husband is a meat-and-potatoes kind of guy. I made the recipe exactly as written and it was delicious. My husband and our 5 and 7 year olds loved it! If you're not a fan of tofu, make sure to get extra firm tofu and slice it very, very thin. My husband asked repeatedly how I got the "chicken" so tender! I can't thank you enough for sharing this recipe!

Easy Tuna Casserole

I've made this a million times exactly as written (although sometimes I omit the fried onions because my daughters don't like them!) It is excellent comfort food, and so incredibly easy. I love that it can be made with things you can keep in the pantry indefinitely. It has saved me a couple of times! Thanks for sharing it.

Broiled Tilapia Parmesan

Thanks so much Phoebe for posting this recipe. I never cook fish and was quite intimidated, but this was very, very, very easy. Made it exactly per the recipe and it was perfect. Delicious! In fact, I had to draw the line when my husband and little daughters requested it three times in one week. Thanks again for sharing it!

Waikiki Cornbread

I was very skeptical about the pancake mix in this. But I had all the ingredients on hand and decided to try it...I'm glad I did! Absolutely delicious, great texture, no "chalkiness" like you can get sometimes with cornbread. Nice and sweet, but not too sweet. I guess the pancake mix is the secret! Dijonnaise Chicken

I mixed a couple of teaspoons of light mayo in with the Dijonnaise (to cut the mustard flavor for my kids), used plain black pepper (all I had) and reduced the oil (only had a couple of teaspoons left in the bottle). This was SHOCKINGLY good. I am a notorious chicken over-cooker, and the texture of this ended up like an excellent rotisserie chicken. Flavor was great, a really unexpected "zesty" balance of the mustard and lemon. Couldn't be easier either! Served it with a prewashed, bagged salad and store-bought crusty whole grain bread. Everyone loved it! My husband, kids, and I say THANK YOU TERI for taking the time to submit this recipe.

Simple Chicken Gravy

Thanks for a great, basic recipe. Whisking the flour and water together before adding to the drippings is something I wouldn't have tried on my own and it worked beautifully! I have used stock and broth with this recipe and it works well too. Thanks again. !

Chicken Tortilla Soup I

I just realized I have never reviewed this...I have made it many times, and I can't say enough good things about this recipe. My husband and children hate spice, so I leave out the chili powder and peppers, and I also don't use the hominy, only because I forgot to buy it the first time. I was worried the cilantro would be a little too "exotic" for my basics-loving crowd, but this got RAVE reviews. This soup with cornbread and a salad is one of our top 5 favorite dinners. I have served this to a variety of people, and haven't run into one single person who hasn't loved it. It satisfies grilled-cheese-on-white-bread lovers, as well as the pan-seared-tuna-with-mango-chutney crowd. It makes for a quiet meal because everyone (including my toddlers) are so busy inhaling it that they forget to talk. THANK YOU STAR!

Beef Stroganoff III

Another five star review... I have saved this on my computer, and titled it 'Perfect Beef Stroganoff'. I am a really bad cook, and honestly if I cannot mess this up, it is impossible to ruin it. I took other suggestions and used about a quarter cup of white onion instead of green, and I did add a clove of garlic. Also, I could not find the condensed beef soup, so I just simmered 2 cans of beef broth for about half an hour to reduce, and it worked really well. It did take a lot of time and effort, but really it was beyond worth it. I really appreciate your sharing this recipe.

Catfish Cakes

Excellent! I followed the recipe exactly, except substituted Orange Roughy for Catfish. I am a HORRIBLE cook, and these turned out amazingly well. I always find a way to mess up even the simplest recipe, so these are truly foolproof! My husband asks me to make these at least once a week now. I serve them with a big salad and it is a delicious dinner. I make the fish mixture in the morning (it only takes about 10 minutes) and put it in a Ziploc bag in the fridge, so the prep time is very quick in the evening. Thank you so much for sharing Bobbie!
