Healthy-ish Irish Oatmeal Cookies

I was looking for a new use for my McCann's Irish oatmeal and tried this recipe. It turned out really great - so tasty and surprisingly filling! I had to make some tweaks, which is not something I usually do (I'm a nervous cooker). I was out of eggs so per the interwebs I used 1 Tbl Cornstarch and 2 Tbls water to equal 1 egg. I also realized I did not have the quick cooking McCann's, so I did a mixture of partially cooked oats and some instant regular oatmeal that I had on hand. I also decided to try the cinnamon mentioned in the description by sprinkling it on top before they went in the oven. It smelled SO GOOD when the cooked. They were a big crumbly in the end - but that actually gave them a unique charm and the flavor and texture were both just perfect. Thanks so much! These were our Christmas morning breakfast!

Black Bean and Salsa Soup

Made it exactly according to the directions (well, I forgot to add the green onions before eating it, whoops!) and it was amazing. And easy. This is going in our regular rotation. Served with a side of mexican rice.

Ranch Dressing II

We make this all the time in the place of store bought ranch. You can't go wrong with the way it is written, but it's also fun to tweak it depending on your preference. I've also used this recipe when things call for dry ranch mix. I just take out all the liquids and use the called for seasoning. It's much better without all those nasty preservatives!

Very Berry Blueberry Smoothie

Mmm. Just made this and LOVE IT. The mixture of flavors is awesome. We make smoothies for breakfast everyday and this recipe is going to go on the heavy rotation!

Sesame Parmesan Zucchini

So good! I did what other reviewers suggested and used way less olive oil. I used about a tablespoon, but I think next time I'll use a bit less. Also like other reviewers, I baked at 375 for 10 minutes, then broiled to give it a nice crisp top. Yum! I stuck all ingredients in a small Tupperware and shook it around to get everything coated nicely.

Warm Greek Pita Sandwiches With Turkey and Cucumber-Yogurt Sauce

We loved this! It was great for leftover turkey. Made exactly as recipe states. Next time, I'll half the sauce (we ran out of turkey long before the sauce) and go ahead and use the whole cucumber.

Awesome. Somebody else said they taste like Orange Julius and I totally agree. They were a bit liquidy for my taste, but I just added in some vanilla yogurt to get the texture I wanted. Fabulous recipe.

Cinnabun Cookies

I followed the directions exactly but did not have a good turn out. Trying to get the dough to roll out flat and then roll up, and then slice was a complete disaster. In the end my husband had to complete the job because I was getting so frustrated. The cookies tasted decent, but not worth making again, even if I could have gotten them to look all pretty.

Guaco-Tacos

We love this recipe. We are trying to build a collection of vegetarian meals, and this one is a keeper. I use black beans, as many people suggested. I also change things up depending on what I have on hand, for example I'll use regular tomatoes instead of roma tomatoes, or skip the cilantro. It's always turns out great!

Easy Strawberry Lemonade

This is good. It actually got better the longer the strawberries sat. It's easy and presents nicely. I would make it for picnics or parties, but it wasn't an everyday in the fridge kind of lemonade.

Ginger Glazed Mahi Mahi

LOVED this! So good. I followed the recipe exactly, except since I didn't have ginger root I did as one reviewer suggested and used 1/2 tsp of ginger powder. I served with rice and another allrecipes item, Greek Vegetables. A perfect meal!

Home Style Macaroni and Cheese

I agree with many of the other reviewers: A little less cream cheese, way less bread crumbs, and more macaroni. Personally, I only think this recipe is okay, but my husband is amazed by it!
