I have 3 great kids; Matt 28, Nicole (Nikki) who passed away suddenly & unexpectedly in '09 at age 20. We will never forget her & we'll forever miss her?!! And my baby, Brendan who is 18. I relax by gardening, reading & enjoying my morning coffee & my beloved pets! I'd love to be able to add my family here but unfortunately, they can also be a source of stress. (Keepin it real people! Alone time is a very good thing too!) God has blessed me with a full plate of life's lessons and experiences. I just didn't know He'd plan on serving it up on a king size serving platter! (What's up with that? Whatever happened to the salad or dinner plates? Am I really that dense? Yes, Apparently! I might not like what life has always handed me but one thing is for sure, I like how my life has shaped me into who I am today. Really, life is truly a blessing!

Enjoying drinking wine with family while cooking Thanksgiving, Christmas and Easter meals with them all.

When the timing of the different dishes works out perfectly. Doesn't happen as often as I would like though!

Forgetting to poke holes in the potatoes prior to baking them. What a mess and a big, DUH!

Oven-Roasted Asparagus
I make this recipe exactly as written but leave the lemon juice as a side addition for those family members who like it and for those who don't. It's so hard to find vegetables that my kids want to eat but this is a commonly requested. Simple, easy and quick to make! Thank you swedishmilk! You helped to make my life easier!

Chef John's Cheesy Crackers
We made these tonight and they were awesome!!! It was so simple and also so very easy & fun to do! What I find so ironic is that my 11 yo who doesn’t like cheese of any kind to such a degree that we have to clarify NO CHEESE! on his burger when we are out to eat & wants his home made pizza made w/o cheese. (Huh?!!!!!) My other kids loved cheese so much that I could get them to eat just about anything if it had cheese in it or on it! My picky eater LOVED it so much that he’s requesting this as his everyday snack at school! It didn’t hurt that we made it together tonight either. It was a fun and a very easy recipe to do with kids. The video helped guide us to make sure we were on track. I’m looking forward to mixing up the recipe w/ different spices and cheeses as Chef John suggest. This is definitely worth giving this recipe a try!!

Sausage Pasta
I made this recipe last week. Very simple and quick to make and absolutely delicious! It also definately conducive to modify it to your own taste. I made it pretty much as written BUT used fresh spinach & flavored diced tomatoes since the recipe uses the juices (Del Monte Diced Tomatoes with Basil, Garlic & Oregano to be exact.) I also followed the advice of some of the other reviewers about cutting down on the amount of liquid which I also did. I discovered I didn't need to use any of the chicken broth. It was plenty juicy and yummy!! I had left overs which I brought to work. I heated it up in the microwave and forgot it back in the lunch room. I had coworkers come up to me to tell me how good it is 'cause it smelled so good and they had to taste it. I was asked if it was from a restaurant. I had to laugh. I ended up having 4 coworkers taste it and two of them have made the recipe so far. They reported loving it too. Great, simple, easy to make and absolutely yummy to the tummy! Thanks for sharing!!!
