Spicy Salmon with Caramelized Onions

I've made this dish twice...... once baking in the oven, and once pan frying. I prefer baking it COVERED, so that the salmon stays moist. I also used 1 medium onion, sliced, for the caramelized onions (cuz you just can't have enough of those!) My husband, who's picky, picky, PICKY asked that this recipe be put in permanent rotation, and that it tastes like restaurant food. Can't get better than that! I served with mashed white/sweet potatoes and steamed baby spinach. SO YUMMY!

Cheesy Fish Fillets with Spinach

My husband asked for a "cheesy white fish" dish.... I came here looking, and found this delicious recipe! I used frozen flounder fillets, so I made it a bit early, and let the cheese sauce help thaw them out. I had fresh baby spinach on hand, so I put two cups in the bottom of the casserole (I scaled down to 2 servings) and followed the recipe otherwise. Paired it with mashed white/sweet potatoes and sliced cucumbers. My husband could only sweep his plate with his fork, and make an "mmmmmmm" sound, because he couldn't stop eating! Thanks for a new addition to our family meal-plan!

Best Tuna Casserole

Delish! I made it gluten free by using gluten-free egg noodles (thank you amazon.com!) and gluten-free cream of mushroom soup. Because GF cream of mush is fairly thin, I only used one can. Turned out great, and totally passed muster with my family, since only have of us are GF, we are continually on the prowl for recipes that make EVERYONE happy. This is one of them :)

Zucchini-Chocolate Chip Muffins

My pickiest eater requested that I make chocolate-chocolate chip muffins. I really need him to eat more vegetables, so I looked for recipe that had zucchini in it! This recipe rocked the house! The only changes I made, were that my kids wanted CHOCOLATE-chocolate chip muffins..... so I added a box of Sugar Free Instant Chocolate Pudding, and instead of using 3/4 cup sugar, I used the pudding pix, and 1/2 cup Splenda. I used a blend of whole grain flours instead of all-purpose, 1/4 cup oil and 1/4 cup unsweetened applesauce...... but followed the rest of the recipe. They came out GREAT, and I've already been asked to make them again!

Just fabulous! I made this with a turnip gratin, and my husband was just over the moon! References to this tasting like lobster are totally true! I'm a non-sugar person, so I swap out for splenda, and it still tastes wonderful! Thanks for a keeper!

Salsa Chicken Rice Casserole

If I could give this recipe 10 stars, I would! My picky husband, and SUPER picky kids love this recipe! I generally make it the way it states on the recipe first, and then the next time, I'll check through the reviews to see what others tweaked. I've done it a variety of ways, and none have dissapointed. Fantastic recipe... now part of my permanent rotation! Thank you!

I prepared this recipe on a bed of 1 cup of cooked brown rice, sprinkled with diced onion...... the fish is so tender, this recipe easily can pass as what my family calls "restaurant food"..... a keeper!

White Chili with Ground Turkey

Fantastic Chili! This has become a fall/winter staple in our household! I generally don't like canned beans, since they add so much salt, so I soak white northern beans overnight, and use those instead. Otherwise, I stay true to the recipe! 2 thumbs up, and a YUM!

Black Bean, Corn and Turkey Chili

Yummy! I found out at the last minute that I didn't have any black beans, so I used a can of chili beans. I put a dollop of sour cream on top as well. Fantastic recipe!

Bacon Mushroom Chicken

Wonderful! Marvelous! I just can't say enough about this recipe! I made this for my family, and served it to them on a bed of rice. For me, I put it on a small amount of Dreamfield's spaghetti (I'm dieting) It was just phenomenal! Everyone loved it, and likened it to restaurant fare! I didn't have any heavy cream in the house, so I subbed Hood's Carb Countdown milk, and put the heat up just a bit more, and cooked until it was reduced to a gravy. It worked out very well. This is now a PERMANENT addition to our family recipe box!

Banana Sour Cream Bread

I've made this bread a few times, and it's very good, but I didn't find that the sour cream really made all that much difference... my husband has eaten it a few times, and says it's Banana Bread... pure and simple. I guess I was expecting this to be spectacular.

Fabulous, fabulous, fabulous! This is the first dish I made for some new found friends that are serious about their food! I am glad to report that they went back for seconds, and then thirds!! Not a drop left!! I also doubled the chicken, and might even go so far as to double the sausage and shrimp next time... a permanent recipe in our household! YUM!!

Strawberry Bread

I had my reservations about making this bread, but I had 1/2 flat of strawberries that were very ripe, and needed something to do with them.... What a delicious recipe! The bread was moist, and the strawberries were perfect... I cut each strawberry in 8 pieces.. worried that 1/4 would be too big... I doubt it. A wonderful cake that is permanently added to my recipe collection! YUM!

Honey Bun Cake I

I made this for a neighbor who had their parents and in-laws visiting for a week. When I got back home, my house smelled so great, that I made another cake for my family. It was gone in both households the SAME DAY! My neighbors raved about the cake, and my husband is asking for more! Very sweet, and very delicious!
