Yellow Squash Patties

Tomato Pesto Batter Bread

This bread was very good and easy to make. Like another reveiwer suggested, I used basil pesto in place of the basil. I think next time I will also add chunks of garlic and try making breadsticks or rolls instead of a whole loaf.

Chicken Tikka Masala

This was pretty good. I omitted the salt as others suggested. I added some garam marsala to the sauce, because it was just tasting too much like tomato sauce as is. If I were to make this again, I would double the sauce to serve with naan bread.

Prosciutto Wrapped Chicken Breasts with Orange-Cranberry Jus

This was pretty good. The cranberry au jus was a little too sweet for me, so next time I will probably omit the sugar and cook the OJ down to more of a syrup consistency.

Pumpkin Cookies V

These came out beautiful! Like other reviewers suggested, I also baked these for 15 minutes, which was perfect. This recipe did make a lot of cookies (about 3 1/2 dozen. Also, make absolutely sure you shape them how you want them before you put them into the oven, as these cookies do not spread at all. I made a few minor adjustments...I used 1 cup of butter and 1 cup of shortening, and I also used 1 cup of white sugar and 1 cup of brown sugar. If you are going to be storing these in a container, they will stick together, so be sure to use wax paper to seperate them. They do best left out on the counter uncovered. The pumpkin keeps them from drying out. Lastly, I got creative with the spices and used cinnamon, allspice, nutmeg and cloves. I will definately be making this recipe many more times. It's a keeper!

Teriyaki Marinade II

This was great! I used this on sirloin tips and let it marinate for 48 hours. The tips were so tender I could practically cut them with a fork and they were packed with flavor.

Adrienne's Cucumber Salad

Great recipe if you are looking for a non sour cream/yogurt based cucumber salad. I used apple cider vinegar in place of the white. I think next time I may increase the sugar to a full cup.

Thai Spiced Barbecue Shrimp

This was very good. I substituted lime juice for the lemon juice and skewered them with slices of lemon and whole basil leaves. It addeda really nice flavor.

Smoky Citrus Kabobs

If you are looking for a sweet tasting bbq sauce, this is it. 10 stars for easiness. I substituted the horseradish for grated ginger and grilled my pork tenderloin whole.

Peanut Butter Noodles

I just finished making these and they are fantastic. A definate keeper. I used Thai Chili Garlic paste (by Dynasty) and found it to be way to hot though. I had to add a little brown sugar to mellow it out. Still fantastic though, next time I will just cut back on the chili paste a little.

Pecan Tassies

I used refrigerated pie dough cut into cirles, filled them with the filling and baked in mini muffin cups for a true "mini pecan pie". They were fantastic and very portable. I will definately be making again.

Roasted Chicken with Risotto and Caramelized Onions

This is definately a "no fail" risotto. Very easy. I omitted the butter and wine. I did stir in some sliced crimini mushrooms at the very end to make this dish more of a complete meal. It was delicious! I think the balsamic vinegar is what makes this dish so special, so don't leave it out.

Broiled Scallops

This was really good. I spinkled the top with a little parmesan cheese and lemon pepper. I also had to cook them for a little longer than indicated. I will definately be making this recipe again and again.
