Tangy Slow Cooker Pork Roast

This was really good. I added a bit more soy and hot sauce. Served with chow mein noodles. Used the leftover meat in Thai dish, with added veggies. YUM!

Thai Peanut Chicken

Marshmallow Treats

Oh My flippin' Heck! I won't even tell you how my DH described them... *wink* I doubled the recipe, added vanilla, a tsp of milk, 1 C crunchy peanut butter. Used a 9x13 pan. Drizzled milk and white chocolate on top. Looks impressive too! A stand by with dazzle!

Too Much Chocolate Cake

I had a bunch of gals over for a craft event and made this quick cake...and holey freakin' heck! This cake ROCKS! Everyone went crazy for it claimed it was the BEST chocolate cake they've ever had. (I just dusted with icing sugar and garnished with a strawberry). Everyone went home with the recipe....

Beth's Spicy Oatmeal Raisin Cookies

Holey nummers! And I'm not an oatmeal cookie fan. I added raisons, craisons and walnuts and a bit of butter extract. This recipe is amazzzing. I also used my ice cream scoop to make the cookies a bit bigger than I would usually. You could easily make friends with THIS cookie...

Maple Salmon

I was born and raised on Vancouver Island, British Columbia, and everyone in my family fishes. I've had many a salmon dinner and this BY FAR stands out as thee very best. And it smells divine while cooking. My hubby doesn't eat seafood, but lemme tell ya, I'll still be making this...! (He can have chili!). It's hard to believe that such a simple and easy recipe can produce such fabulous results! Enjoy!

Downeast Maine Pumpkin Bread

Very moist and delicious! Used 1/2C oil and 1/2 c applesauce, 3 eggs (because that's all I had) and added dried cranberries, raisins and pecans. Made one 9x5 loaf, sprinkled with icing sugar and 12 muffins, drizzled with white and dark chocolate and sprinkled with icing sugar. This is a great recipe and one you can have fun with, adding fruit, chocolate, etc.

Baked Honey Mustard Chicken

This is close to my version, but i prefer my recipe (given by a friend years ago). Equal amounts of butter, margarine and honey and a good squirt of dijion mustard (a heaping tbsp) and rosemary. Fabulous. I serve with roasted veggies. Life is good!

Italian Sausage, Peppers, and Onions

Oh My Flippin' Heck! This is super good! I added some canned tomatoes, some red pepper flakes - mixed in some penne pasta. Yowsers! This is one of those meals that you eat more than you should, once you're full, just because it's so darn yummy!

Sangria! Sangria!

Oh my flippin' heck! This is awesome. I never thought I liked Sangria...but then a friend made some that changed my mind. I don't have her recipe so I tried this one. My hubby doesn't like red wine and loves this too! I didn't have lemonade when I first made it - used lemon juice. Also, I had orange and grapefruit juice to use up - yum. Could really play with the fruit juice. And I like this sagria both with and without the soda water (or ginger ale). Enjoy!
