Green Salad with Cranberry Vinaigrette

Loved this! I used Oil instead of butter, and red instead of white wine. Next time I'll add more wine. Brining ahead in salt water (~3 cups water/3 tbsp sea salt), kept them very moist when cooking.

Healthier Classic Macaroni Salad

Excellent healthier version. I did make a couple minor changes. I didn't think it needed 1 cup of mayo. Do it to taste. I used 3/4 cup. Also instead of onions, I used green onions.

Easy Miso-Chicken Ramen Recipe | Eating Well

Braised Balsamic Chicken

Superb! Super Easy. Defnitely cut the balsamic in half (to 1/4 cup), and replace it with an additional 1/4 cup of broth. I may try white wine instead as well.

Kalua Pig in a Slow Cooker

Terrific EXCEPT Take note of the other reviewers. VERY easy to add too much salt. Use MUCH less than in the recipe. Like no more than 1/2. I don't like the idea of liquid smoke, so I used smoked paprika instead. Here's what I recommend: 1) 2 lbs pork butt or shoulder, 2 1/2 tsp Hawaiian salt, 1 tbsp smoked paprika. Rub over pork. 2) Cook for 16-20 hours on low (flip sometime in the middle) 3) Take out, shred meat. Place back in slow cooker mixing in with juices. Mix in 3-4 cups shredded raw cabbage. 4) Cook on low ~ 1 hour longer.

Baingan Bharta (Eggplant Curry)

Delicious! Very picky husband approved. Added baked chicken cooked separately on top, but next time may try cubing & cooking in with dish. Couldn't find Ginger Garlic Paste, so I mixed finely grated equal parts fresh ginger & minced garlic with enough olive oil to make a paste. Be very careful with covering & cooking for 10 minutes. Bottom of my pan burned and was a MAJOR clean up.

Roasted Pork Loin

Very Good. Took ~1.5 hours for 2-2.5 lbs. I added a bit of olive oil to the paste to make it a bit wetter. Also brush olive oil on the entire roast and added a bit of lemon pepper & salt all over. The rosemary added terrific flavor. Took the advice of one other reviewer and after it was done cooking, let it rest for 10 mins. wrapped in foil. Definitely will make again.
