With just 6 weeks left before we move to Germany, it's time to start really pushing to use up the items in our pantry and spice cabinet! While visiting Dublin (on a student's budget of NO money) I was able to cook a batch of macaroni & cheese large enough for 5 people, under 5 euroes, and NONE of it saw the next day.

Octoberfest German Potato Salad
This recipe is delicious! It really reminds me of one o the potato salads I had while living in Germany! (FYI potato salad to Germans is like Chili to Americans - every Region/Family/BUndesland has their own special recipe and they are all delicious!) I substituted honey dijon mustard for the sugar in the recipe. This change gave the sauce an extra tang and a faint caramel color. Guten Appetit!

Oat Bran Muffins
This is a great base muffin recipe - I've experimented with adding addition ingredients like apple cider mix (2pkgs/batch) or different combinations of spices. Cardamom and diced dates is a great combination, too!

Spinach Casserole
I will confess I added to this recipe to help enhance the flavor. I added the following: Garlic powder Thyme Parsley Parmesean cheese Tomato sauce (you can experiment with different flavors too) The additional ingredients really added dimension to this dish.
