Oven Baked Zucchini Fries

Yum! I used 2 garden fresh zucchini, and left the skin on. I made my own bread crumbs with some stale whole wheat bread & used my homemade italian seasoning. Didn't use that much butter & threw in some of my low sodium cajun seasoning. My husband thought they needed to cook a bit longer, but I thought they were good. Thanks!

Strawberry Ribbon Bread

I halved this recipe; I'm the only one who will eat it in my house. I used fresh strawberries which I soaked in sugar and fat free half n half. Others mentioned that the batter was too dry, so I went ahead and used the full 1/4 of oil. I didn't have any red food coloring and in the filling I used a whole egg instead of half. I also think I added too much orange extract. My bread tastes more orange than strawberry. I felt like my cream cheese layer soaked in so next time I'll try & make that layer thicker. It's good & moist, thanks for sharing.

Sweet-Sour Broccoli Salad

This didn't go over very well for me. The apple cider vinegar was just too overwhelming. I didn't have peanuts, so I toasted sunflower seeds & slivered almonds. I used a sweet red onion and less sugar. As is, I didn't care for it, so I cooked up some bacon & added a bit of fresh lemon juice. I'll use a different vinegar next time. To me this was all sweet with no sour.

Microwave Sponge Pudding

Wow, I saw this and said to myself "there is no way that works." Well, I'm actually totally shocked that it does. My microwave is very strong, so I cooked it at 2:15. Melted a Hershey bar & bam, quickest sweet tooth fix ever! The actual cake w/o the chocolate is pretty dry & unimpressive.

Mondi's Super Simple Chicken

This recipe is just what it says "super simple". We liked it, but mine was a tad bit dry. Next time I'll start checking at 45-50 minutes. I should have made gravy out of the drippings, they looked yummy. I'm not a huge dried basil fan, and hubbie can't have salt so I liberally sprinkled with my homemade all purpose seasoning. Thanks for the recipe!

Strawberry Pineapple Bread

This is off the charts delish. I halved the recipe & got 3 mini loaves. I subbed most of the oil with applesauce (I did use a bit of oil). I left out the nuts, but added in 2 kiwis. So good! Almost like a cobbler baked into a bread. Yum!

IBBZ Rice, Broccoli Cheese Cups

Excellent, filling breakfast! I always have leftover brown rice & this is an easy way to use it up. I measured and only used 1 1/4 cups of brown rice. I had a bit less mozz, so I threw in a bit of Kraft parmesan blend. I added 2 large cloves of garlic since I'm a garlic nut. I used a homemade spicy ranch. Yum! It made 8 muffins for me. Might just have to go back for another one. Thanks for sharing, I'll be making these a lot.

Kickin' Crunchy Oven "Fried" Chicken

Yum! Thanks for the recipe. I didn't follow it perfectly. I only had Rice Chex, so I subbed those for the cornflakes. And for the egg mixture, I used a very spicy ranch instead. It was leftover from a catered lunch & it's so good I had to use it. I only had boneless breasts. I took ElCay's suggestion and roasted broccoli & potato wedges, very good dinner, everyone really liked it. Thanks for for sharing!

Sweet & Salty cookies

Yummy! Nice little cookie. Note to myself for next time, cool the peanuts before throwing them in. I was using mini choco chips & the peanuts started melting them. Delish, everyone enjoyed them, thanks for sharing the recipe!

Lemon Squares

Yum, great recipe! I did use more lemon. I tried too hard to get the bottom layer up on the sides. Next time I will just smush it all in the bottom of the baking dish. I had too much in the corners & not enough in the middle of the pan. Great recipe that is even more lemony after cooling completely. Thanks for sharing Baking Nana!

Lemon Bread

This is off the charts lemony goodness. I am a huge lemon lover so I did use more, and also added some lemon extract. This batter was silky & sinful! I'd call this more of a cake than bread. Dense, moist almost poundcake type texture. I used my Pampered Chef mini loaves baker and it made 2 fairly big ones, I might have gone for 3. It was hard to get them out, but they are so good noone is going to care if it doesn't look perfect. Yum, thanks!

Garlic Mustard Vinaigrette

I wasn't planning on liking this; I don't adore Dijon. But, wow! This is really, really good. I never would have thought that red wine vinegar and mustard would go well together, but yum! My garlic cloves were really big, so I only used 2. Love it, thanks for sharing your recipe.

Muffins Spencer

Thanks for sharing this recipe! I've made a lot of muffins for my diabetic husband and this was one of the best! He can't stand bananas so I microwaved a small sweet potato and mashed it with a bit of buttermilk. I used Whole Wheat Pastry for the whole wheat flour. I used Diet Ginger Ale & less walnuts, only because I'm running out & they are so expensive. I should have read the recipe all of the way before starting because I put all 24 in my standard size 12 muffin tin. I was afraid they would be a huge mess, but they turned out wonderfully! It's a lot of work for muffins, but very worth it!

Don't Want to Cook Monday Chicken

For me, it's Don't Want to Cook Wednesday! I only had fresh broccoli so I steamed it in the microwave til al dente'. Mixed a bit of good cheddar in with the soup. On top of everything a good sprinkle of my homemade Cajun Spice; we like everything spicy During the last 5 minutes sprinkled on some french fried onions. It was well received & it's one of those recipes that is easy to play around with according to your tastes.

Cajun Spice Mix

I make a lot of spice mixes. This one was just ok IMO. For me Cajun means a bit of heat. I replaced some of the chili powder with hot new mexico chili powder. I cut the salt back & used a good quality sea salt.

Yogurt-Herb Salad Dressing

I really enjoyed this! I did leave out the honey, since the apple cider vinegar is sweet. I also replaced a bit of the apple cider vinegar with fresh lemon. I'm not a big fan of minced onion, so I used less onion powder. Held back just a touch on all of the mustards. The end result is really light & refreshing.

I halved this recipe. I wanted to eat it right away with some canned crescent rolls I baked. Yummy! I used quite a bit of fresh garlic; we are garlic nuts. Didn't have seasoned pepper & not really sure what seasoned pepper is so I just used cracked black pepper.

These didn't work for me & the family didn't care for them. They were limp and oily; maybe even undercooked at this time/temp. We like things spicy, so instead of just salt, I used my homemade no sodium Cajun Spice Mix.

Not Your Mama's Tuna Casserole

My first thought upon seeing the ingredients was "I'm not going to like this." I had everything, so I decided to give it a shot. I was actually very pleasantly surprised & ended up eating more than I should have. I halved the recipe because I only had a 5 ounce can of tuna. I didn't use the full amount of co mushroom or sour cream, but pretty close to it. I felt the amount of onion powder was a bit much so I used a mix of onion powder, garlic powder & black pepper. I'm not a big salt eater & I thought with the canned soup it would be salty enough, but I was wishing I had mixed a bit in. I also think a dash of fresh lemon juice would be nice to set off the tang of the sour cream. These are all easy changes to suit your tastes. I am not sure I totally loved the boiled eggs in there. Next time, I might leave them out or mash them up more. I had some leftover stale garlic bread so I used that on top. Easy, peasy lunch & very filling. Thanks!

Orange Banana Smoothie

I make a lot of breakfast smoothies, but I like them thick. I knew the amount of liquid vs. frozen was going to produce a really thin smoothie; my banana was even frozen. I have a whole bag of sweet, juicy oranges, so I was glad to find a recipe that used the whole orange. My blender is really strong, so I had no issues with the orange being stringy. I added a bit of protein powder and ground flax. I loved it, but next time I will use WAY less milk and more ice. Oh, and I left out the sugar since my fruit is so sweet. I even added the salt, can't detect it though so next time I'll leave it out.
