Easy Weeknight Chicken Parmesan

I did this in the oven to save a few calories. I realize it's a sponsored recipe but I used my homemade whole wheat bread crumbs & my canned marinara sauce. Sauteed some mushrooms in a pan and added them casserole style to finish with the fresh mozz in the oven. It was really good!

Healthier Best Spinach Dip Ever

I didn't have a leek, but I did use the Knorr Dry Vegetable Mix. I halved this recipe so that it would have more spinach/water chestnuts. I also replaced a lot of the sour cream with greek yogurt. You couldn't even tell. You mention cheese in the description, but I don't see any.

Chicken Pot Pie IV

This is one of those recipes that is easy to make your own. I had leftover grilled chicken thighs and garlic sausage. I only had cream of mushroom soup and has some fresh mushrooms. Less cheese, but lots of fresh cracked pepper and fresh garlic. It was a good, economical meal using what I had on hand.

I needed something quick tonight & this was great! I agree with others that it needed to cook a bit longer. I also used a red bell pepper, mild yellow pepper and a jalapeno straight from the garden. I'm also a garlic nut & used several big cloves toward the end of the cooking time with a big splash of fresh ground pepper. This worked great with some Johnsonville Turkey Sausage with Cheddar Cheese that I had on hand.

Chipotle Mayo

We loved this. Mine was too hot (I picked out 2 big peppers) so I had to add more mayo. I also added some lime to tone it down. We had it with oven fried potatoes tonight, really good stuff. Thanks for the recipe!

Beef and Bean Chimichangas

I had to sub around & use ingredients that I had on hand, but I loved this idea of baking them. I only had corn tortillas so I warmed them a bit in the microwave. I also didn't have any corn or taco sauce. I did make a homemade salsa verde in place of the taco sauce and it was delish! Topped it with the salsa verde & Amy's Cilantro Cream Sauce and we had a very yummy meal. Thanks for sharing!

Tomatillo Salsa Verde

Yum, yum, yum! I had some frozen tomatillo puree so I started with that and used less of the water since mine already seemed to have quite a bit. This was easy to play around with until I got the taste that we were looking for. Great stuff!

Best Brownies

Kind of bummed with this recipe. The picture was so beautiful, but my brownies didn't turn out anything like it. The actual brownie was fantastic, but the frosting isn't good at all. And, I couldn't get it to spread at.all - even though I put it on while they were still warm. Makes me wonder if people used a different frosting recipe.

Chicken Salad Panini

Wow, never would I have thought to make a Panini with chicken salad. It's fantastic. I didn't really follow the recipe, more the idea! I don't want all that bread so I used 2 slices of Whole Wheat. I didn't really think cheese would be that great so I left it off. Used toasted slivered almonds. I didn't have an apple but I used sweet onion, celery and red bell pepper. Easy to play around with & my end result was fantastic. Thanks for broadening my mind to the fact that you can grill chicken salad.

Orange Toast

This was a good, easy, tasty snack. I cooked mine the exact time called for using 8 minutes and 7 after flipping. Next time, I'll cook it a bit less and take it off of the baking sheet sooner. I think it kept cooking the sugar and one piece was very, very crunchy and hard.

Sean's Mommy's Roasted Root Vegetables

I used what I had which was baby carrots and 4 turnips. I sprinkled in some dark balsamic before roasting. Since I had a smaller amount, I took them out at 35 minutes. Very good!

Orange Yogurt Bread

Wow, this made a great little cupcake. I halved the recipe & made about 7 of them. The combo of yogurt and butter makes them really moist. I'm not big on glazes, so I made a buttercream/orange frosting. Yum!

This is good! I put the first 4 ingredients plus the walnuts in a cast iron pan & toasted them a bit. Used big golden raisins and added pepitas. It's really good over plain yogurt.

Is there anything that doesn't taste good with vanilla almond bark? I think not! In my normal life, I wouldn't be caught dead eating Flamin' Hot Cheetos. And, after buying them had to hide them from my grubby son's hands! Yummy; thanks for this interesting little recipe :)
