Shiitake Mushroom and Cheddar Soup

I must be too used to Velveeta having grown up with it. I obviously don't know how to stir in cheddar. Mine must have curdled, it was just a big stuck together blob. The soup was still good & flavorful even after taking the cheese blob out. I did have to use regular button mushrooms, it's all I had. I also subbed fresh oregano & thyme for the fresh sage. Subbed a bit of beer for the beef broth. Thanks!

Pumpkin Chip Drops

I had the opposite problem from Baker Bee. Mine hardly spread at all. I also felt, at the time specified, mine were still bit raw. The last batch I cooked at 15 minutes. I did halve the recipe and used a bit less of the egg. I only buy old fashioned oats. They are good, but I bet they would make a better bar cookie.

Caramel-Apple Crisp

Yum! My husband is a diabetic so I messed with the recipe a bit. Used sugar free caramel sauce, just a bit of brown sugar mixed with artificial sugar. Less butter & I used old fashioned oats. He loved it. He put chopped walnuts in his & ate it on top of his steel cut oatmeal. Thanks for the recipe.

Southern Okra

Good stuff! I didn't boil my okra that long, it was already pretty tender out of the garden. I didn't add the sugar, hubby is a diabetic. I also added a lot of garlic, just because we love it. Cooked smoked sausage with the other veggies, hubby doesn't think it's a meal w/o meat. Thanks!!

Chocolate Syrup

Oh man, so bad - yet so good! Sweet, but delish. I made it in the microwave & let it sit overnight in the fridge. It was the perfect consistency. I did use a bit less water and a very good quality cocoa that I buy at mysagespice.com. Delish!!

Tasty Lentil Tacos

We love these! They take longer to cook though. Maybe, we like them mushier rather than al dente. I add a lot more garlic and my own blend of Taco Seasoning. I also added some chopped up roasted hatch green chilies for more flavor. Easy, good dinner! With the leftovers I'll grill up some chicken & have soft chicken tacos.

Crunchy Cheese Crisps

I really like these, but hubby said they tasted like a Cheddar Bay Biscuit that didn't rise. I think they taste a bit like a homemade Cheez It. Next time, I will cook longer & flatten more. After that, I think that will really taste like a Cheez It. I halved the flour, using WW Pastry. Used Baked Potato Chips and added more cayenne, we like things spicy. I used freshly grated cheddar, but didn't fine grate it, so I threw in some fresh Parm that needed to be used. I'm really enjoying them, thanks for the recipe!

Pumpkin Chocolate Chip Muffins

5+ stars. My co-workers loved them. I did use 1/2 cup brown and 1/4 white sugar. Instead of water, I used Vanilla Silk Pure Coconutmilk. I make my own Pumpkin Pie Spice which has cardamom, I think that gives it just the extra kick of flavor. I didn't have enough semisweet so I threw in some walnuts. For the flour I used 1 cup of WW Pastry & 1/2 all purpose. I also think they would have been overcooked at the specified time/temp so I cooked at 375 for about 18 minutes. Loved them! Even better straight out of the fridge the next morning.

Mimosa's Tex-Mex Casserole

As Mimosa says this is comfort food! Easy to sub, I only had Black Eyed Peas, I normally always have Ranch Style, but didnt and the Black Eyes were good too. I had 2 poblanos that needed to be used so those were sauteed with the onions. Added a really nice flavor. 4 huge cloves of garlic since I'm a garlic nut. I even had different cheese, but it's all good! Thanks for sharing Mimosa!!

Zippy Zucchini

I also doctored it to taste and had to cook it longer. I halved the recipe, added mozzarella, my homemade Italian Seasoning, 3 big cloves of garlic (I'm a garlic lover) and sundried tomatoes. I left out the salt (we can't have it) added fresh cracked black pepper. It ended up being fantastic.

Cold Spaghetti

I liked this. I halved the recipe since it was only me eating it. I had some garden ripe tomatoes that were getting mushy. I didn't even bother peeling & seeding, just threw them in the blender. I did get out a bit of the water when I cored the top part out. I left out the sugar. I had WW pasta already in the fridge from the night before. I also used a splash of Lemon Olive Oil that a friend gave me. Gave it a nice fresh twist. It was a great, easy healthy lunch.

Caramel Macchiato Banana Bread

Delicious! This is so moist & a great mix of flavors. I didn't make the glaze, but I followed the rest to a T. Yum, thanks for sharing a fantastic recipe! Next time I make it, I'll make muffins. I have a hard time judging when a loaf is done. My ends were a bit overdone.

Personally, I love this. I like to know exactly what I'm eating. I didn't use the sugar & used a lot more garlic. I like the added punch of ground mustard. This was great with some grilled chicken from last night.

Fast Food Biscuits

I loved these. I love the occasional treat of biscuits and honey. These cooked up perfectly for me. I used Sprite Zero which was probably flat after sitting on the counter all night. The cook time is way off, they were done in 10 minutes. Even the bisquick box says 8-10 minutes.

Clone of a Pretzel Dip

This is addicting! I'm not all that familiar with using mustard seeds, but they are so good in this. The only jelly I had was a homemade jalapeno jelly that I got at the farmer's market, so I used that. Yummy!!

Peanut Butter Graham Bars

Yum! I had items in my pantry that needed to be used & this fit the bill deliciously. I halved the bottom part because I was using a square pan, but I left the choco/pb part the same. I also had some dark choco & white choco chips that were getting old so I melted those together & added on top. This was easy & a great way to use up baking items that were getting old. Thanks!

Grilled Chicken with Rosemary and Bacon

LURVE it! Thanks so much for this recipe. We are constantly grilling and this was super easy, and really tasty! My husband even asked me what I seasoned it with and I said "duh, bacon." He said "I had one of the ones that didn't have bacon, it was really seasoned well." I then remembered the garlic. We are huge garlic lovers, but I've never thought of just sprinkling straight up garlic on. We loved it! I just realized I forgot the s&p, oh well, successful dinner for me!! Thanks for sharing your recipe.
