Cottage Cheese, Avocado, and Black Bean Salsa

Yum! Some of my favorite ingredients all together. My proportions are different, it seemed like too much cottage cheese & salsa for me so I eyeballed it. A good quality (homemade) hot salsa really adds flavor. It's great, thanks for the recipe!

Oma's Cottage Cheesecake

We love this! I'm trying to find some treats that my diabetic husband can eat. I did cheat with a premade crust. I used lowfat cottage cheese, ww flour & splenda. He loves it! Put a bit of sugar free strawberry jelly on top.

Oven Pancakes

I wasn't blown away by these, but my diabetic husband loved it. I used splenda & my homemade pumpkin pie spice. A lot less butter. Whole Wheat instead of AP and I added in about 2 heaping T of both ground flax & wheat germ. Didn't use the confectioners sugar. Topped it with strawberries, sugar free syrup & pan toasted pecans. He loved it & was thinking of other fruit combos to eat on top.

Dry Buttermilk Ranch Mix

To make Ranch Dressing I used 1/4 c. nonfat plain yogurt, 1/4 c. light Mayo and 1/4 c. skim milk. Mix with 2 T of the dry mix. Store in the fridge.

Grandma's Applesauce Meatballs

Yum, my husband said these were the best meatballs I've ever made. They are so moist & flavorful. I will admit that I subbed ingredients that I had on hand. I only had 1 pound of 85/15 sirloin. I had homemade ww seasoned bread crumbs so I used a bit less milk. I only had monterrey jack. I always sneak veggies in so I added garlic, carrots and celery with the onion & chopped very fine in the food processor. I cooked them at 325 for longer just to make sure the carrots cooked. We are eating it over ww penne. Delish! I'll make meatballs with natural applesauce often!

Watermelon Agua Fresca

Yum, I've never had one of these. They are very refreshing. My MIL brought a delicious watermelon over for Mother's Day. We ate most of it & I only had about a cup & a half leftover so I decided to try this on a smaller scale. I'm glad I did, I really like it, thanks!

Mini Apricot Cheesecakes

Yum, we loved these. I'm making them for my diabetic husband. I only had sugar free strawberry preserves so I used that. I just made an easy walnut crust with no sugar and used Splenda for the sugar in this recipe. He loves it, thanks!

Roasted Spicy Salsa Verde

Very good, but I needed more oomph. I added cumin & lime juice. I also love onion, garlic and cilantro so I used more of all 3. But, that's what is great about recipes, you get to personalize. Thanks for sharing!

Florida Strawberry Muffins

I didn't get very much water out of my strawberries & I was afraid that the batter would be really dry so I mixed in some light sour cream & skim milk with the sugar water. I also make a homemade pumpkin pie spice mix that I used for the nutmeg adding more than 1/4 t. They are good & baked up really pretty. I only made 9 so they are huge. They were brown on the outside, but I was afraid still underdone in the middle, so I turned off the oven and left them in a few additional minutes.

Strawberry Banana Protein Smoothie

Yum, I really liked this. I used skim milk in place of the water. I was nervous that I'd have chunks of almonds, but my blender did a pretty good job. I only had plain protein powder so I added cinnamon, a touch of vanilla & some ground flax. Good stuff, and a great way to start the day. Thanks!

Best Black Beans

Wow, I really like these. I eat pretty simply & this was simple, clean and good. I didn't use the salt because canned beans are high in sodium. I did cook them a bit longer, because hubbie is not a fan of crunchy onions. Thanks!

Thank you for the recipe! It's delicious!! I had a problem with the scratch brownies I made, so my picture doesn't do it justice, but it's outstanding! I will be making it soon with a box mix, or a better scratch brownie recipe.

Harwood Family Budget Friendly Salsa

Yum, thanks for sharing your recipe. I love fresh salsa. I was looking for a mild salsa to mix with my husband's habanero salsa (it's too hot for me to eat). I used 1 can of roasted garlic & onion diced tomatoes, but left the rest of the ingredients the same. I had some roasted poblanos from yesterday that I used for the green chilies. I left the brown sugar out, hubbie has diabetes. Thanks again!

Pecan Pear Bread

Wow, this is fantastic! I used Splenda (hubbie is a diabetic). Replaced most of the oil with natural applesauce, I did add a bit of oil. Replaced 1 c of white flour with WW Pastry flour. Used my homemade pumpkin pie spice that has cardamom in it. I left the peels on most of the pears & cut them up in pretty big chunks. Made 3 mini loaves, that are so good!

Bruschetta with Hummus

Wow, I love this. 2 of my favs . . . hummus & bruschetta. When I started, I didn't realize that the hummus needed to be refrigerated overnight. I skipped that step. I also make garbanzos from dried beans. I toasted the bread with the parm for a bit, but I also wanted the hummus, cheese (I used mozz since I don't have any feta) and tomatoes toasted, so I took out the bread, put the mentioned ingredients (with the herbs) and finished toasting. Delish!

Only 2 things that money can't buy . . . . . yum, this is fantastic! How can you go wrong with garden tomatoes & fresh basil? Delish!! I only had shredded mozz, next time I'll buy fresh slices. Thanks for the recipe Mrs. Williams!
