Outside-The-Box Taco Skillet Meal

Reviewed: Aug. 8, 2010
Another awesome recipe! The whole family liked it. I used tat's taco seasoning with this. I left out the olives, and carrots because I'm out. I also used a yellow pepper instead of the red. Great meal tonight! Thanks for the recipe.

Gold Rush Brownies

Reviewed: Aug. 8, 2010
Wow this little gem hit the spot. I was having a raging sweet tooth today. I didn't have semisweet, but I had some caramel/milk choco swirl chips to use up. Good stuff and simple, my kind of recipe!

Low Sodium All Purpose Seasoning

Reviewed: Jul. 20, 2010
We love this on everything. It's easy to customize for your taste buds. If I'm using it on fish, I like to add ground bay leaves. For Mexican type recipes, I'll add some New Mexico Hot Chili Powder. If your family doesn't like any heat, you can leave out the Cayenne.

Excellent! Made it as stated. I had to use more ice, but my ice maker makes pretty small pieces. Very refreshing & good.

Italian Stuffed Zucchini

Reviewed: Jun. 16, 2010
We really liked this. I had leftover meat spaghetti & fresh mozz so I decided this would be good. I make my own bread crumbs & didn't even use the parm. Really tasty, I'll make it often!

No-Sugar-Added Blueberry and Banana Wheat Muffins

Reviewed: Jun. 16, 2010
My husband is a diabetic so I'm always looking for no sugar muffins. These are pretty darn good. I had some really juicy, sweet blueberries which I think really help. I did use a bit less soda, and baking powder. I also added about a teaspoon of my homemade pumpkin pie spice. Without this added spice it's probably boring. The batter was really thick so next time I think I'll give it just a small amount of liquid sweetener. I only got 12 regular size muffins & needed 2 more minutes in the oven. Next time I'll add some walnuts for even more nutrition. Thanks for sharing the recipe.

Ham and Cheese Chop Chop

Reviewed: Jun. 16, 2010
For me as written it doesn't have enough oomph. I sauteed onion, mushroom and garlic then threw in the ham. I also used less cheese, just sprinkling a little on top. Served with a habanero salsa in a WW Tortilla. Thanks for the recipe, it's easy to play around with.

Pasta with Peas and Sausage

Reviewed: Jun. 14, 2010
I bought the wrong kind of sausage, but it still worked. When I sauteed the garlic, I threw in onion, red bell pepper & mushrooms. I also added quite a bit of black pepper. Thanks for the recipe, it was good!

Orange Cranberry Whole Grain Breakfast Cookies

Reviewed: Jun. 13, 2010
One of the best cookies I've had! Loved them. My orange would probably be considered large, but I went ahead and used all of the zest. I also subbed dried pineapple for the dates. Followed the rest exactly, delish! Thanks for sharing the recipe CC! I got 24 smallish cookies. I thought using oil they would spread, but they really don't. I smashed down the second batch a bit.

Easy Spaghetti with Tomato Sauce

Reviewed: Jun. 2, 2010
Hard to rate this one. It was so dry, but it might depend on your fresh tomatoes. I have an overabundance of early romas in my garden. After chopping them all, this sauce seemed so dry. I cooked the meat with an onion. I added red wine and a can of tomato sauce. Along with the oregano (from my garden that I dried) I added basil & thyme. Lots of fresh garlic. I've never used canned mushrooms so maybe that would add a lot of water too, I used fresh, chopped them & threw them in. We eat low salt so I just added a tiny bit of sea salt. Ate it over whole wheat thin spaghetti with a bit of romano. End result was delish, but I realize it's a bit different from the original recipe. I do appreciate finding a recipe that uses fresh garden tomatoes though, thanks!

Great On The Lips, But Easy On The Hips- Spicy Chipotle Black Bean Dip

Reviewed: Jun. 1, 2010
Yum, I can't imagine an easier dip. Awesome! I thought I bought the correct chipotle but I bought peppers in adobo sauce. I just threw a couple in the blender. I did use less salsa because my boys are salsa fiends & I didn't want to use the whole jar. Very easy to play around with & delish! Thanks for the recipe Christina.

Chili Cheese Puff

Yum, tasty little breakfast. Kathy on the Recipe Exchange mentioned subbing protein powder for the flour so I did. Great little tip! I used half the cheese & butter. I added garlic powder & fresh ground black pepper. Good stuff!

Mango-licious Tilapia

Reviewed: May 26, 2010
Wow, this is fantastic! I like to make fish for my lunch (I work from home) and the rest of my family aren't big fish eaters. I didn't have any orange juice so I gave the fish a few splashes of fresh lime. I also didn't have an onion, so I used a bit of cucumber & red bell pepper. Delish & healthy. I have enough of the salsa left so I'll make it again tomorrow. Thanks!

Cake Mix Cookies VIII

Reviewed: May 25, 2010
I thought these were going to be a flop. The batter was so thick I couldn't even mix in the choco chips. Several were left in the bottom of the bowl. Mine also didn't spread at all, I had to smush the second batch down. This might have been because I used a Reduced Sugar Devil's Food Mix. The finished product ended up being pretty tasty though, like a small brownie bite. I notice a lot of people adding oil & vanilla, I would probably do that if I did this again.
