Sriracha Scrambled Eggs

Easy, tasty breakfast. I'm not sure if the butter amount is a typo but I only needed about a teaspoon. I also used 1/2 t of sriracha. Added some garlic powder and garlic chives. Next time I think I'll add some spinach at the end.

Caprese Salad with Balsamic Reduction

I loved this. The reduction was easy to do in the microwave. We grew a new tomato this year "Golden Jubilee" that was fantastic in this recipe.

#1 Pea Salad Most Requested!

This was good but I tend to like a lot of *stuff* in these types of recipes. I made it as is and it was kind of bland for me. I added an aged white cheddar, chopped boiled egg, celery and nuked some turkey bacon for on top. I do really like the almonds in it!

Frozen Banana Bites

These were ok. I love peanut butter and chocolate but the frozen banana was a weird texture. I took another reviewers suggestion and warmed the peanut butter so that it was easy to dip the (frozen) bananas in it. I melted the chocolate in the microwave.

BLT Rollers

I was on the hunt for a BLT sandwich type recipe (for my breakfast) when I ran across this. I loved the idea of it. I don't have cream cheese so I just spread the sour cream, then added homemade salsa to 1 whole wheat tortilla. I cooked some turkey bacon in the microwave. This was a super easy breakfast. I liked the suggestion of another reviewer to add an avocado. I loved walking out to my garden and picking the tomato and lettuce. I didn't do all the pre-chopping, I just placed everything down on the tortilla, rolled it up and cut the slices.

Creamy Cucumber Tomato Salad

I wish I had left out the balsamic vinaigrette dressing. Or maybe the kind I have is just too tart. The combo of lemon/balsamic wasn't a big hit with me. I ended up adding more sour cream. I did love using up garden fresh produce. I used a mix of tomatoes - I have a Heirloom Orange that is delish! I also added some red onion.

Chicken Salad My Way

I LOVED this and will make it often. I had oven baked chicken leftover so I skipped the first part. I used less fresh ginger - I'm pretty new to it. I also didn't have celery but had all other ingredients. Yum!

Tomato Bruschetta

Yum! I have cherry tomatoes and basil growing out my ears this year. This was a great recipe to use them in. It's an easy recipe to use what's growing in your garden. I have mild banana instead of red bell and white sweet onion instead of purple. Fresh parm instead of mozz. I know I changed a few things, but I still think the simple elegance of the dish shines. Easy and delish!

Garlic Basil Spread

I'm not sure what to think of this. Normally I love garlic and spicy but with just 8 basil leaves (I actually used 10 of the biggest I could find on my plants) this is really, really garlicky and the whole teaspoon of red pepper flakes makes it mighty spicy. To me this is more of a flavored oil than a spread. I made mine in the blender and it is thin. I toasted some sourdough bread, poured a bit of this on and topped with Parmesan. It's ok, but I won't be making it again.

Mexican Quinoa

Yum! Quinoa is out of my families comfort zone because I have only made it once (and that was a big fail). I followed the directions this time and it came out delish! I had homemade chicken stock and taco seasoning mix since we have to eat low sodium. I added garbanzo beans the last 5 minutes and fresh spinach after taking it off the burner. Total healthy meal! Hubbie had to add cheese to the top of his and he ate it with tortilla chips, but he two bowls! Thank you for sharing this delicious recipe!

Pumpkin Spice Protein Drink

Absolutely excellent! Great way to start the morning. I make my own homemade pumpkin pie spice so I used it in place of the spices listed. Left out the vanilla since I had Unsweetened Vanilla Almond Milk. I didn't have any dates so I did the peanut butter sub that is listed (although less). At first I thought the peanut butter was going to be too overpowering, but after taking a few sips it's actually fantastic! Thanks for sharing your recipe manella!

Buttermilk Ranch

Love it! I happen to have dill and parsley growing so I combined fresh herbs with the dry. I upped the other spices a bit - I tend to like my foods overly spiced. Really delicious! Thanks for sharing your recipes.

Hash Brown Waffles

Wow, this worked great! I had a hard time getting them out of my waffle iron so I basically picked it up and dumped them, lol! I used my own seasoning with store bought refrigerator hash browns. I also used less oil but I made sure the iron had Pam on it. These were great and really fast.

Baked Buffalo Chicken Strips

Unless your chicken breasts are turkey sized this is a huge amount of marinade/crumbs. My review is for the marinade since I didn't have panko or the egg sub. I had 6 chicken breasts and buttermilk that needed to be used. I absolutely love this marinade and will use it often. I used a combo of seasoned bread crumbs, parm and instant potato flakes with added garlic and black pepper. I've never been a fan of the double egg dipping so I left that out and just now realized that I forgot the added hot sauce at the end. I also cooked them on a rack and I used a lot of Franks in the buttermilk and could totally taste it on the chicken. Great marinade!

As written this is too bland for my family. We tend to like things spiced up. I added lemon juice, salt and a lot more pepper. I used just a bit of stevia for the sugar.

Muffin Pan Frittatas

Yum! I made 5 ramekin sized and cooked a bit longer. Used up some mushrooms and homemade roasted peppers. Added lots of fresh garlic and even some dried. I only had white onion and Mexican Queso cheese. Great recipe to use up stuff you have in the fridge. It was delish.

Broccoli Salad with Red Grapes, Bacon, and Sunflower Seeds

Yum, I subbed dried cherries since I didn't have any grapes. No onion, so I left it out. Added slivered almonds and a sharp white cheddar. Easy to play around with and very tasty!

Easy Roasted Peppers

I only had 3 peppers so that's what I did. I'm lazy so I just threw them in the oven on parchment paper. I agree with a previous reviewer that you get a more moist end product. Easier clean up too, since all the water is still inside the whole pepper.
