Banana Bread from Gold Medal® Flour

Yum, this is tasty. I used my mini loaf stoneware and it made 3 mini loaves. I added Pumpkin Pie Spice, less sugar and left out the nuts. I realize this is a sponsored post, but I did use store brand flour :) Pretty good banana bread.

Southern Apple Tuna Salad

This was surprisingly really good. I tend to like tuna the way I grew up on it & don't usually stray from that. But, I had a juicy apple sitting there and I thought "what the heck". Since I'm only making one serving, I halved the recipe. They must make tuna cans smaller because mine is 5 oz. I used the white albacore in water. I wasn't sure what to think of adding olive oil, but I really liked it. I did use a bit less and added more mayo, but I like the subtle flavor of a good olive oil in there. I used a bit less apple because it seemed to be too much for the amount of tuna. I only had dill pickles so I used a bit less dill. It's a really nice change of pace from my normal tuna salad. Gramma Momo's WW Pancakes

The serving size must be a typo. It should probably say it serves between 2 and 4 people. I cut the recipe in half and it fed my son & I. It made 10 smallish pancakes. I cut the baking soda & powder by just a tad and my pancakes were very, very fluffy. I had to smoosh them down a bit. I did have to add a bit more milk, which I hate to do since it makes you mix them more. But, the flavor was very, very good! I used White Whole Wheat and less vanilla (personal preference, I'm not a huge fan of vanilla in pancakes). I used a bit less brown sugar. I just used Pam instead of oil in the pan. Thanks for sharing your family recipe, I'll make it again!

Brown Rice Raisin Pudding

Yum! I've never had rice pudding so I wasn't sure what I was in for. My husband has diabetes so I used a bit less than 1/2 cup of Splenda and 1 T packed brown sugar in place of the sugar. Still not really good for a diabetic, but he can have a few bites. I only had regular raisins and they were pretty packed together so I added them in early. This gave them a bit of time to plump up. I make a homemade version of pumpkin pie spice so I used that in place of the cinnamon & used more because I love it :) Thanks for sharing!

Low 'N Slow Mushroom Barley Soup

We loved this. I had to add chicken because my family doesn't think it's a meal w/o meat & I happened to have some cooked chicken. I also couldn't find my barley so I made some Japanese Black Rice in the oven and added it toward the end of the soup time. Turned out fantastic, flavorful and filling! Thanks for sharing the recipe.

Mom's Creamy Asparagus Spread

For me this is a bit bland and 1 t of onion hardly seems worth the effort so I dumped in more. I wish I had added some fresh garlic. I'm going to have to spice mine up a bit. I'm also wondering what it would taste like baked a bit.

Green Chile Puff

Normally I love garlic, but it came off a bit strong in this dish. My husband asked me if this was made with cornmeal, he thought it tasted a bit cornbread*y. But, it was good, we both liked it. We put a bit of habanero hot-sauce on top.

LEMON LOAF

Yummy! This was delicious! I had a fish boil for my husband's birthday and had a lot of butter and lemon left over. So, I used butter in this recipe instead of the shortening. I also took seeker's tip and used a bit of zest in the batter and about a T of lemon juice in with the milk. It's moist and lemony deliciousness. Thanks so much for sharing manella. I'll make this a lot. It was easy and I always have these ingredients on hand.

The Best Oatmeal Cookies

Love these! I will have to admit that I was afraid my mixer was taxing itself and I left out the last 1/2 cup of flour. I realize that this made mine flatter than others, but the taste was wonderful! Buttery goodness. I did use a Chinese Cassia Powder for the cinnamon and upped the amount. Left out nuts (kids don't like) but added a few semi-sweet chips. Yum! Thanks for the recipe.

Cheesecake Lemon Bars

We loved these. My middle son (who doesn't like sweets) ate half the pan. I halved the recipe and used an 8" square pan. I did up the lemon juice and zest. Yummy, thanks for sharing!

Eggnog Pancakes

Wow, these were tasty! When I first read the recipe I thought "that's too much eggnog" but after whipping up the batch with a bit more flour and only 1 cup of eggnog, I had to add more eggnog. My batter was still really, really thick but they taste great! I didn't have the problem with them being flat at all, almost too puffy. Maybe some eggnog is thicker than others?

Quick Texas Stew

Wow, I haven't thought of this recipe in a long time. I used to make it when my boys were young & we were short on time. I was surprised that Target didn't have the Ranch Style Chili Beans so I had to use Aldis brand of Chili Beans. I also subbed Fire Roasted Diced Tomatoes and some chopped up Roasted Hatch green chilies (that I had in the freezer) for the Rotel. Added in about 3 heaping T of my homemade habanero salsa (we like things spicy). This recipe is very easy to make with things in the pantry. I just had to pick up the soup. I did drain the corn (to rid some of the sodium).

Sweet Potato Chili

My whole family loved it! I did use all ground beef. I put the ground beef in raw with step one, but only cooked on high about an hour, then switched to low. Left out the cinnamon (just now realized that). Had to sub a garden fresh bell pepper for the celery. I also didn't add the water, my slow cooker seems to make a lot of water on its own. I only had diced tomatoes so I subbed the Black Beans for a can of chili beans (gave me the chili seasonings that the chili tomatoes would have). We love flavor, so my pinches were probably more like spoonfuls (except no salt, we have to eat low sodium). I also forgot the corn. Delish!! I can't wait for the leftovers. Today I'm going to eat it more like a dip on garden veggie crackers.

Pumpkin Pancakes

I have to agree with another reviewer that this turned out really, really thick. So thick I couldn't tell when it was time to turn it over because it didn't bubble at all. I don't like to add extra liquid because I always fear that this over-mixes it. I did use white whole wheat; maybe this made it even thicker. I also used my homemade pumpkin pie spice. I wasn't really that impressed with the taste, but my husband liked them.

Easy Weeknight Chicken Parmesan

I did this in the oven to save a few calories. I realize it's a sponsored recipe but I used my homemade whole wheat bread crumbs & my canned marinara sauce. Sauteed some mushrooms in a pan and added them casserole style to finish with the fresh mozz in the oven. It was really good!

Healthier Best Spinach Dip Ever

I didn't have a leek, but I did use the Knorr Dry Vegetable Mix. I halved this recipe so that it would have more spinach/water chestnuts. I also replaced a lot of the sour cream with greek yogurt. You couldn't even tell. You mention cheese in the description, but I don't see any.

Chicken Pot Pie IV

This is one of those recipes that is easy to make your own. I had leftover grilled chicken thighs and garlic sausage. I only had cream of mushroom soup and has some fresh mushrooms. Less cheese, but lots of fresh cracked pepper and fresh garlic. It was a good, economical meal using what I had on hand.
