Chutney Baked Brie

Really delicious. I couldn't find mango chutney, so used apricot preserves mixed with a bit of cinnamon. The curry adds something very special to the overall flavor of this dish. One thing: I baked for almost twice as long to insure that the cheese was gooey and bubbly. YUM!

Corned Beef and Cabbage II

Fantastic! Such a difference from regular boiled corned beef. And we absolutely loved the cabbage and apples- I carmelized some onions and added a few teaspoons of apple cider vinegar, then added the cabbage, apples and water. Divine!

Sugar Snap Peas

I love just about any vegetable roasted in the oven, and this didn't disapoint. I only gave 3 stars because the recipe missed a critical step: make sure that you remove the ends and string down the side of the pea pod, or it will be really difficult to eat. Other than that- yum! I added a bit of lemon zest as a garnish, and it added a nice, fresh note.

Absolutely, insanely good! I followed the recipe exactly, except I baked it in 2 9" rounds. It was so moist and flavorful, and got raves from my guests.

Rosie's Bok Choy Salad

Really yummy! My fiance loved it, especially the crunchy ramen and almonds. Next time, I think I'll add some more veggies (cucumber, red bell pepper, carrots) to make it more nutritious.

Bermuda Spinach Salad

Absolutely the best dressing!! You could probably cut the sugar a bit- we like a sweet dressing, though. For those people who thought the onion flavor was too strong, perhaps you used red onion. If you use a sweet white onion, like Bermuda or Maui, it is divine.

Southern Grilled Barbecued Ribs

Very, very good! The only reason I didn't give it 5 stars is because the sauce is too tangy and vinegary as written. I added a good sized glug of honey, and another large spoonful of brown sugar, and it was perfect. Yummy, fall off the bone goodness!

Ugh. I followed this recipe exactly, marinating for 8 hours, and the it was so sour from the lemon that it was inedible. And we love lemon!

Sauce Rosee

Really good flavor! We enjoyed it, but didn't like the crumbly/hard texture of the dried herbs in the smooth sauce. Next time, I'm going to use fresh herbs, and I think it will be a home RUN!

Kielbasa with Honey Mustard

Pretty good! I added a bit of crushed red pepper to spice it up. Like the previous reviewers, I added orange bell peppers and onions, and sauted the whole thing before adding the ginger ale and brown sugar. I also put it in a toasted pita. Good, quick supper.

Fresh Spinach Salad

Absolutely delicious. It is a very classic spinach salad recipe, and had a nice ratio of flavors in the dressing. I served it with baby back pork ribs and curried couscous. Everything was gobbled up!

Quick and Easy Green Chile Chicken Enchilada Casserole

Excellente! Definitely don't skip charring the tortillas. Adds a nice smokey flavor and keeps the tortillas from turning to mush. If you don't have a gas burner, cook the tortillas in hot oil in a skillet for a minute or so. I also added seasonings to the sour cream (cumin, red pepper flakes, cilantro, garlic) and mixed it with the chicken to make it easier to prep. We all loved it!

Baked Oatmeal II

Great, but I made quite a few changes! I also reduced the sugar to 1/3 cup, and used 2 TB butter and 1/2 cup applesauce to cut the fat. I also used quick cooking oats, since that is all I had on hand, and added some slivered almonds. Lastly, I baked in an 8x8 pan since I wanted a softer consistency- more oatmeal than cookie bar. We loved it with a little warm milk poured over the top. Delish!!

Ramen Coleslaw

Oh, yum!! totally addictive. I used oriental ramen, since that is what I had on hand, and it was delicious. I also toasted my almonds and ramen in a little butter. I would definitely save the noodles and almonds on the side and add right before serving to keep from getting soggy. Total winner! Everyone loves it.

Margaritas to Die For

Wow! These are STRONG, but very good. More of a sipping margarita. I used Patron silver, and cut it down to 3/4 of a cup, instead of a full. They were plenty strong, and we like a strong cocktail. Very enjoyable, and will make again and again. Perfect addition to a summer barbeque.
