Eggplant Parmesan II

Reviewed: Apr. 1, 2012
Delicious!!! I took the advice of another reviewer and sweat the eggplant and baked at 450F. But other than that, I followed the recipe exactly, and it was great.

Creamy Chicken and Wild Rice Soup

Reviewed: Mar. 25, 2012
Such a great recipe! I took the advice of some other reviewers and sauteed onion, carrot and celery in the pot before adding the broth, water and chicken. I also used whole milk in place of cream, and cut back on the butter a bit. It was delicious!!

Southwestern Casserole

Instead of ground beef, I used Charley's Slow Cooker Mexican Style Beef -- which uses chuck roast. It was amazing. Definitely a keeper.

Penne Rosa with Parmesan Crusted Chicken

Reviewed: Feb. 28, 2012
Great tasting and easy dinner. I use regular spaghetti sauce and add cream, rather than use jarred Alfredo. Also I use chicken cutlets to make them nice and thin. Definitely a keeper!

Flourless Peanut Butter Cookies

Reviewed: Aug. 31, 2010
Added three tbsp of flour and a splash of vanilla - the cookies don't spread that much, so don't be afraid to put them close together on the cookie sheet - and do use a fork to flatten it out.

Delicious Raspberry Oatmeal Cookie Bars

Reviewed: Jul. 10, 2010
This is absolutely genius. It's such a simple, easy recipe, and yet it produces a dense, rich oat bar. I used homemade preserves, and it was delicious. Next time, I'll consider layering dark chocolate in the place of preserves. The best part is how nicely it cuts up into bars. This is perfect for a bake sale or cookie exchange.

Great basic mac and cheese recipe. I cut the cream cheese in half, and it was still very rich.

Restaurant-Style Buffalo Chicken Wings

Reviewed: Dec. 19, 2009
Excellent, spicy and fresh chicken wings. So easy to do. I do understand that these may not be authentic, but for the vast majority of the U.S. these are what is considered 'buffalo chicken wings'. I made it with fresh Maytag blue cheese dressing, celery and hot dogs with mustard. Unbelievable.

Individual Beef Wellingtons

Reviewed: Nov. 8, 2009
Wow, what a delightful dish. I often serve filet for special meals, and this added that special touch to make it fun and different. The flavors are classic combinations, and the recipe works well exactly as written. The meat was so flavorful and tender - the cooking times were accurate. However, I have made some variations for fun on some occasions - I've added feta to the paste mixture, and I've swapped shallots for onion

Gulliver's Cream Corn

What a great side dish! I used 2% milk instead of cream, and I thought it tasted very rich. I can't wait to break this out at Christmas :)

Slow Cooker Beef Stroganoff I

Reviewed: Oct. 24, 2009
For some reason, this recipe came out watery, and the cream cheese never seemed to melt properly in the mixture. It was more like cream cheese clumps in a watery stew. Maybe cream would have worked better. It just didn't work for me.

Jerre's Black Bean and Pork Tenderloin Slow Cooker Chili

Reviewed: Oct. 6, 2009
Delicious! The house smelled amazing when I got home from work. Like many reviewers, I used pork loin instead of tenderloin. When you are slow cooking like this, you can often use cheaper cuts of meat, since the low and slow heat tenderizes just about anything. Even after shredding the pork, I felt the consistency was more like a stew than a chili, but I was actually happier with that result.

Buttery Soft Pretzels

Reviewed: Sep. 27, 2009
This was so delicious. I accidentally forgot to add the oil to the dough, but the pretzels turned out great anyway. As suggested by many reviewers, I brushed the baked pretzels with salted butter after they came out of the oven. I made a variety - plain, garlic and honey. All were excellent. The baking soda bath makes the final product nice and brown. Great for football games!!

Mushroom Orzo

Reviewed: Sep. 16, 2009
Great recipe! I loved the earthy, rich flavor. And it was a one dish recipe! I halved the butter. It stuck a tiny little bit at the end, but the flavor and texture was there. Also, I didn't have pearl onions, so I thinly sliced a white onion and it was fine.
