Easy Vegetable Pot Pie

HOLY WHAAAAAT!!!! This pie is too good and too easy! I made my scrumdiddlyumptious version with thawed frozen veggies and I pre-baked my crusty goodness 9 min. before filling it with the delicious oozy goozey yummy filling... yeaahhhh!!! THIS PIE IS INVITED TO ALL MY PARTIES FOR ALL TIME! I feel like a famous pie makerrrr.

Roasted Garlic Cauliflower

POWER TO THE CAULIFLOWER or this is good to the tenth cauli-power... or some other pun... this stuff is delicious and simple, the only words I want to hear when I am finished with a recipe. What every you caul-it, I love it... alright, I'm done now.

Connie's Zucchini "Crab" Cakes

I WISH THERE WERE A BILLION STARS because this is that good. As a new vegetarian, I was looking for something simple to make as a meat substitute. I had all the plans for side dishes in the works and, when I stumbled on this, it was love at first sight.. and later.. love at first bite. This recipe is perfect and delicious. I followed it completely and only added some salt and pepper on the zucchini before I mixed it with all the goodies. It tastes amazing and much better and more compassionate than crab cakes. Everyone loved them and they were so easy! These "crab" cakes left all of us very un-crabby and that's the way we want to stay!

Broiled Parmesan-Lemon Tilapia

HOLY TILAPIA! There's nothing fishy about this recipe... it's flawless and delicious. Don't change a thing. I doubled the parm mixture and I could have made more, every milimeter of fish needs to be slathered in its goodness. YUM! Will make this part of my regular rotation.

Vegetarian Tortilla Soup

I LOVED this soup. It was tortally good-- get it? No? Okay... well, I added some black beans for some extra protein and flavor, since this was the main course. I love this dish! The leftovers tasted even better the next day, too.

Old Fashioned Mac and Cheese

Tum tum is happy. That's what it would be saying if it were a three year old, at least. This mac was pretty tasty. It was cheesy and delicious. Only think I would change next time is a little less onion, it was just a bit much for me. The stuff still somehow vaporized into all of our stomachs and there were no leftovers.

The Best Lemon Bars

I used a 1/2 cup of lemon juice but it still wasn't quite enough. It needed more kick, more tart, more sour faced goodness to balance out the sweetness. Also, I think 20 min was a bit too long, I would have preferred the lemon bit more curd-y and key lime pie-y. This recipe is close but not quite the one.

Portobello Mushroom Burgers

These shroom' burgers are so good. The mushrooms are magical .... but not that kind of magical... but almost. My only tip is to toast your buns. These mushrooms are juicy and will wet your buns. So get 'em nice and crispy or the first bite will leave you with a soggy mess. I spread some garlic aoli on these bad boys and they were so bad... they were good... so good...

Shrimp Linguine Alfredo

Yum! Yum! I made this recipe because we already had all the ingredients. I didn't even know how much i would enjoy it! I vegan-ized it by using vegan butter and a bit of nutritional yeast instead of cheese. Subbed vegan half and half, too. I had trouble getting it to thicken up-- I'm just not patient enough-- I'd rather just STUFF IT IN MY FACE!

Addictive Sweet Potato Burritos

Helloooo you sweet, sweet potato burritos! It's a pleasure to eat- I mean, meet you. I picked this recipe because of all the positive reviews and because it was easily vegan-ized. I substituted Braggs Liquid Aminos for the soy sauce. Next time, I am not going to stuff my burritos quite as much. I made only 5 burritos with this recipe... 12 is a definite stretch. But 7 or 8 would have been the right amount. Also, I used black beans instead of kidney beans-- great choice! Lots of flavor! Once you go black (beans) you don't go back!

Real Hummus

This is a great basic hummus recipe that will leave your tummy singing ... or humming? I added some roasted red peppers that I had in a jar- just a bit. No need for the extra teaspoon of salt, either. The lemon gives enough acid (no relation to the drug although, you may find yourself dizzy and disoriented by how good this hummus is.)

Indian Dahl with Spinach

Where's the FLAVA?! This recipe needs SALT and you could easily double the spices! But it's a good basic recipe and tasted delicious on some rice, accompanied by the sweet symphony of garlic naan. I also added some supporting notes of shredded carrots, chopped red pepper, chopped canned green chili (2), and chopped zucchini. Healthy and happy bellies!

Artichoke Bruschetta

Once again, my failure to prepare effected the end product. Luckily, these were still a wonderful compliment to our penne pasta dinner. However, the fact that I only had Miracle Whip and not regular mayonnaise effected the end product. Tangy miracle bruschetta... didn't quite have the effect I was looking for. There's always next time?
