Uncooked Banana Pudding

LOVED IT!!! My box of pudding from Kroger was slightly bigger but I made it exactly as the recipe stated otherwise. Maybe it was the size of the dish I used, but I couldn't use the whole box of vanilla wafers and I took the suggestion of another person and crumbled some to put on top. Hubby ate two huge portions in minutes and raved about it! No more waiting for pudding to cool down for me now, this is my new go-to recipe!

Kielbasa and Cabbage

I always try to make a recipe the way it directs before changing it. I thought this was very tasty but I would definitely make some slight changes. First, I would cut the sausage length wise and then into smaller chunks. Second, I'd saute the sausage first, then add the liquid, seasonings, and cabbage strips. Third, instead of wedges, I quarter it, then slice them into 1/2" strips to make it easier to wilt and eat. Fourth, will definitely decrease the caraway by about 1/2. I love caraway but that was just too much for me and way more than hubby cared for. Fifth, change the water to apple cider, apple juice or even beer. Sixth, add a dollop of butter at the end, just before serving and serve with a crusty bread.

Amazing Muffin Cups

I just got these out of the oven a few minutes ago. I have to say, they are very tasty. I did have to use a roll of sausage because I didn't have any links thawed out, though. I also had only put about 1 2/3 cups of shredded colby/jack cheese(it was what I had on hand). I sprinkled a little garlic powder over the potatoes before I mixed in the butter and seasoning for a little extra kick. TIP:I don't know if it was the sausage, the cheese or the butter, or a combination of all three, but there was a lot of grease bubbling over the side of the pan and dripping on the oven bottom, so next time I will use a pan under the muffin pan and I will also use foil cupcake liners, as the potatoes didn't come completely out of the muffin cups.It will make cleanup a lot easier!

Riddle's Gumbo

Took others suggestion and cut back the chicken broth to 2 qts, although it was plenty thin even then. Think next time I'll make more roux to thicken it more. I left out the red chile peppers because it was hot enough without it. I love gumbo but the heat does get to me. It's very good though! The local restaurant wants $8 for a bowl. I made the entire soup for what it cost for 2 bowls!

Boudreaux's Zydeco Stomp Gumbo

The Creamiest Hot Cocoa Mix

Darker chocolate flavor but if you want it milder, add less cocoa powder. It took a long time to fine tune this the way I like it. Hope you enjoy it too!

Slow Cooker Beef Bourguignon (aka Beef Burgundy Stew)

This smells just like the recipe my former father-in-law used to make, except he didn't put potatoes in his. He'd simmer it down and serve it over hot buttered egg noodles. I gave it 4 stars because it was too salty for my tastes. Next time, I'm omitting the salt, as there is plenty in the onion soup mix and canned tomato sauce. I also use beef broth base, which is much lower in salt than bouillon. I don't use canned veggies, so I used fresh potatoes. Here's what I did: 3 lbs stew meat, 1 1/2 lbs potatoes, 1 chopped onion, 2 cups carrots (I love carrots), 1 8oz can tomato sauce, 1 cup water, 1 small bottle (single serving size) of Gallo Cabernet Sauvignon and enough water to make 1 cup, 4 tsp Orrington Farms Beef Broth Base & Seasoning, 1 envelope dry onion soup mix, 1 tsp dried rosemary, 1 tsp garlic powder, 1/4 tsp of fresh ground black pepper, 1 small can of mushrooms, drained. You can thicken it with either corn starch or flour, as directed, but other methods such as using potato flakes like Potato Buds, or pulling out some of the potatoes, mashing them, and stirring them back into the broth work equally as well. I prefer to mash up some potatoes and stir into the broth, which is why I upped the quantity of potatoes.

Cherry Cheesecake

I made this exactly as directed. I was afraid that it was going to be runny, but it did firm up well enough for each slice to hold its shape. I fully expected hubby and son to complain because it wasn't the new york cheesecake style, but they LOVED it! My son asked for the recipe and ate two slices back to back. 3 people mowed through it in less than 24 hours! Definitely a keeper. Next time, I'm trying out shortbread crust instead of graham cracker. I bet it'd be good with a chocolate crust too!

Mrs. Sigg's Fresh Pumpkin Pie

I found this recipe to be pretty darn good, and definitely better than Libby's. However, I tweaked it a little to make it better, in my opinion because I like my pies a little spicy. I added a total of 3 tablespoons of flour instead of just 1 so it had a better texture. I also added 1/2 teaspoon of cinnamon, which isn't in pumpkin pie spice.

Double Chocolate Pie II

VERY good! I didn't have the unsweetened chocolate squares. Instead, I substituted 6 tablespoons of Hershey's unsweetened cocoa powder, which I added to the sugar mixture and 2 tablespoons of butter, which I added when it was time to add the vanilla. I set aside 1 cup of the milk and stirred the egg yolks into that and then stirred the eggs mix into the milk and sugar mixture. No lumps of scrambled eggs this way. For those of you who don't like dark chocolate, you can substitute milk chocolate morsels instead, which are much sweeter. The pie was divine and will be my go-to chocolate pie recipe from now on!
