About this Cook
I am a stay-at-home mom with three boys and one baby on the way. Freezer cooking is a time saver and now a hobby. I often TEAM UP and cook with my friends. I started a web site to explain 'how to' and provide encouragement. ( www.dinnercoach.com ) Being a wife and mom is very fulfilling. Good job to all who are investing their lives into raising the next generation.

Hummus-Stuffed Portobello Caps
These mushrooms are a great appetizer that can be assembled ahead of time. I followed recipe minus the lemon pepper. I swapped out green peppers for colored ones I had on hand and also added about 2 Tablespoons of green onions. That I would do again. I took them to a party. Several hours before I had to leave I completed the recipe except for baking and put them in the refrigerator. I baked the mushrooms at the party. They were a hit!

Popcorn Cake II
The family liked the flavor. The boys enjoyed seing M&M's. Personally I liked it warm, before it had a chance to set up better than after it cooled. I wanted to make indivitudal serving sizes so I tried putting M&M's in the bottom of muffin tins to make the final product more eye appealing. However they did not stick well to the popcorn and ended up scatering them on the serving platter for interest. I think popcorn balls would work better than pressed into small shaped tin.

Pumpkin Pancakes
Nice flavor and texture to these pancakes. I lowered cholesterol by using 2 egg whites instead of 1 egg. Chocolate chips sprinkled on the pancakes before flipping added a yummy flavor...of course. I'm sure these will freeze nicely and can be reheated in the microwave or toaster. Enjoy!
