Trained in the fields of Archaeology and Psychology, retired. Self-employed and devoted to my family and my Church. I am an American Patriot who believes in the Constitution and the Bill of Rights and freedom for all. I enjoy humor and creative thinking and enjoy people from all walks of life.
My favorite things to cook
I enjoy most of my meals on the grill but love creative oven recipes and techniques to enhance seafood and casseroles. I especially want to focus on mastering comfort foods for sharing with my extended family.
My favorite family cooking traditions
My mother was the family cook but I always took an interest in changing and modifying recipes. During my teens I really got carried away with creating hot N spicy dishes. I have toned down my heat over the years and enjoy blended/ layered flavors. I especially like to cook for others because I like to see their response to getting good home cooking. My main family tradition was a dish called the seafood bucket which we served on New Years Eve and then followed up with Oysters Rockefeller on New Years day. We had a lot of fond memories shucking oysters out back in the dead of winter freezing our hands off with soaked gloves. What fun!
My cooking triumphs
My greatest triumph was an herb encrusted leg of lamb which I got rave reviews on my first attempt.
My cooking tragedies
Trying to use the wrong caramel on an apple pie recipe and I burned the caramel and got an apple pie covered in a cement compound that I couldn't cut.

Slow Cooker Buffalo Chicken Sandwiches
It was really great I just used a medium buffalo sauce to add some kick and it turned out great. I will follow other peoples suggestions and make buffalo chicken ranch pizza with the leftovers.

Chicken Marsala
The sauce was a little thin with the way it was prepared according to instructions. Watch the thickening to the level you desire.

Mushroom Rice
I love the recipe but had to increase the heat to cook down the fluid at the end of 20 minutes. I will decrease the amount of broth next time to see if I get the results others have in the past. I think people probably should stick with white rice only with the fluid measurement in the recipe.
