Greek Couscous

mmm, the perfect side dish to a baked salmon and spinach dish. I followed one of the reviews and omitted the water and replaced it with more chicken broth. I also used whole wheat couscous and since I didn't have sundried tomatoes, I just used some homegrown tomatoes I had dehydrated. Absolutely delicious and I'm eating a bowl of leftovers right now. :) Next time I might add just a touch more broth.

Maple Dill Carrots

I used canned carrots, just heated them before adding the other ingredients. I used 1 tsp dried dillweed and that was perfect, and Smart Balance spread instead of butter. All other ingredients were as written. Awesome, easy and will definitely make often.

Hot Bacon Asparagus Salad

this is absolutely awesome. We've made it lots of times for guests, and there are never leftovers (which is good because I don't think leftovers would keep well). I've added water chestnuts for extra crunch, and sometimes don't use the egg. love it!

Moroccan Chicken Stew

Cheesy Broccoli Quinoa

this is awesome. I love quinoa but have trouble finding really good recipes other than my standard pesto quinoa that I found on this site. This one is now my #2 go to. So easy and quick! I cut down on the cheese - it's quite a lot.

Easy Sugar Cookies

These were the easiest cookies I've ever made. I made these for a baby shower, so I dyed the dough pink (I did add the extra egg as recommended). I also added a half tsp. of almond extract (secret ingredient in all my sugar/butter/choc chip cookes) in addition to the vanilla. Next time I'll use more almond, but they turned out beautifully. I also didn't want to take the time to roll them, as the dough was quite sticky, so I used a small pampered chef scoop to make the dough balls and it was just the right size. I will be making these often.

Orange Pecan French Toast

Very good! Next time I will add a few more pecans, but otherwise, this was a great breakfast. I didn't have french bread, so I used leftover homemade white bread and it was great.

Sherry Sour Cream Chicken

Wow, simple, fast and easy to cook, and so good! I added a few mushrooms, but other than that followed the recipe. Sauce is delicious (a little thin, but full of flavor). We served it over wild rice mix and asparagus - perfect meal!

Asparagus Quiche

I loved this, and my husband even said, "make sure you rate this good." I made a few changes to make it a little healthier. I used lean turkey cold cuts instead of bacon, and used evaporated milk instead of half and half. I cut the recipe in half, and didn't use the egg white. I didn't steam the asaparagus. I did add an extra egg and a little extra evaporated milk as it seemed a bit dry and it came out beautifully. The nutmeg is a must! I'm going to try to freeze this - will update my review when I see how it turns out. UPDATE - YES IT FREEZES WELL!

Mini Ham Quiches

These are awesome! I was a little worried after I followed one reviewer's suggestion to mix the butter and baking mix prior to mixing in the liquids. I had very lumpy egg/baking mixture but it worked out great. Instead of ham I used dried venison, and instead of olives used chopped fresh spinach. I cut the butter down a little and next time will cut it even more. I also used just eggs white, and substitued evaporated milk for the half and half. Very easy and delicious and I can't wait to make them again. I bet these would be great made in large quantities and frozen.

Maria's Paella

Wow, was this delicious! I made a few alterations - a friend who lived in Spain said you can substitue turmeric for the saffron without much taste difference and it worked great. I also had a bag of frozen paella seafood mix from Sam's Club - so I just guesstimated the amount needed. Use chicken breast chunks instead of thighs. I also followed the suggestion to substitue a can of Rotel (used Habenero Rote) for part of the diced tomatoes and that added GREAT flavor. This makes more than enough for 6 people though - we have a ton of leftovers, although that's ok as I don't mind leftovers! Thanks for an awesome recipe!

Blueberry Banana Bread

oh wow, this was delicious (I did make several alterations, and it takes a LOT more time to bake than the directions indicate). I used half whole wheat flour and half all purpose, used half shortening and half applesauce, used 2 eggs and 4 egg whites. I also added pecans and a dash each of cinnamon, ginger and nutmeg. I will be making this again next week for a bake sale - absolutely the best!

Mexican Pork Chops

With some of the recommended changes, this was very good. I only had 2 big chops, so I cut them into pieces and browned. Then I mixed corn, black beans instead of kidney, and a can of Rotel tomatoes and chilis. I also added about 1/4 cup taco seasoning and the rice, then simmered for a while. After browning chop pieces, I mixed everything together and baked 30 minutes. I served it in tortillas with cheese and FF sour cream - delish!
