Spicy Beef Curry Stew for the Slow Cooker

If you're looking for a curry dish, this isn't it. But it's a great stew recipe. I added extra curry and it still didn't have good curry flavor. I did like it very much, though. I used a venison roast that I cut up, and served over mashed potatoes.

Quick and Easy Alfredo Sauce

This was so good! I cut back a bit on the butter - used 6 T instead of 8. Next time I'll cut back some more. I also had 1/2 cup of cream, so I used that plus 1 cup of skim milk instead of using 2 cups milk (glad I did that or it would have been way too runny). I also used fresh minced garlic which was wonderful. I didn't have fresh parmesan and didn't have bad results using the packaged powdery stuff. Also used reduced fat cream cheese. I sauteed some shrimp, chicken, broccoli and mushrooms and added that to the sauce and served over penne - what a great meal.

Basic Fondue

Very good! Most cheese fondues call for such expensive cheese, so this is a nice, cheaper alternative. I use 1/2 milk and 1/2 beer (the darker beer the better!). I also add a bit more Worchestershire sauce because I love the flavor. Good stuff! This recipe does make a lot - I usually halve it and it's more than enough for an appetizer for 4 people, with some leftovers too.

Whipped Butternut Squash

This was surprisingly good, since I'm not a huge fan of squash all by itself (love stuffed squash though). Nice flavor, I used less margarine and sour cream than called for, but more than some of the reviewers. Good Thanksgiving side dish!

Orange Pecan French Toast

Very good! Next time I will add a few more pecans, but otherwise, this was a great breakfast. I didn't have french bread, so I used leftover homemade white bread and it was great.

Spiced Pumpkin Seeds

Great flavor, crispy texture, this is the perfect seed recipe! I only had 3 cups of seeds, and they are already almost gone and I just made them an hour ago! I followed some of the suggestions, using Hot Salt instead of regular salt and adding a bit more garlic.

Awesome Eggplant Rollatine

This is so good, but a lot of work, so I modified it. Instead of dredging in flour and then the egg/cheese mixture, I omit the flour altogether and just dredge the eggplant in egg, then in the cheese/spices mixture before frying. Instead of rolling it up, I just layer slices in the pan (with some sauce in the bottom of the dish) and put the cheese/spinach mixture on top, and then cover with the remaining sauce. It's truly awesome!

Roasted Red Pepper and Crab Soup

This is a good substitute for the lobster bisque I crave from my favorite restaurant. I used imitation lobster since I didn't have any real crab or other seafood in my house and I was looking for a good dish to warm up for dinner after class tomorrow. I also used evaported skim milk instead of the cream and it was just as good (much less fat). Very tasty!

Slow Cooker London Broil

Wow, was this awesome. I used two cans of tomato soup, two cans of cream of mushroom soup as suggested. I also used a venison roast, and added some potatoes, carrots and onion to the bottom of the slow cooker. By the time it was done, the venison was SO tender and you couldn't taste any wild flavor at all. Delicious!

Key Lime Pie VIII

Delicious! I used fresh grated lime zest which gave the filling a different texture than I'm used to, but definitely enhanced the flavor. I also used a graham cracker crust.

Easy Sugar Cookies

These were the easiest cookies I've ever made. I made these for a baby shower, so I dyed the dough pink (I did add the extra egg as recommended). I also added a half tsp. of almond extract (secret ingredient in all my sugar/butter/choc chip cookes) in addition to the vanilla. Next time I'll use more almond, but they turned out beautifully. I also didn't want to take the time to roll them, as the dough was quite sticky, so I used a small pampered chef scoop to make the dough balls and it was just the right size. I will be making these often.

Oregon Salmon Patties

I'm torn on rating this. Flavor - definitely a 5. But as fas as consistency, these patties wouldn't stay together no matter what I did. I followed the suggestions to not use the reserve juice but they were still too moist and fell apart. I just fried it up in a pan with a little oil, kind of like hash browns, and it was very good. But as far as a salmon patty, this didn't work.

Super Easy Sloppy Joes

Pretty good - a little sweet for my taste, but easily fixed by omitting the sugar. I added a bit more chili sauce, and added celery salt since I didn't have celery. I also added some green tabasco sauce - yum!

Sugar Snap Peas with Mint

This was good - not quite as outstanding as some of the reviews made it sound, but it was a refreshing change from my normal preparation. We eat snap peas this time of year once or twice a day, so any change is good!

We Be Jammin' Jamaican Banana Bread

I agree with one of the other reviews - just another banana bread. It did have a light lime taste, but this bread was a LOT more work than regular banana bread so I probably won't bother to make again.

Swiss Cheesy Cauliflower

Pretty good, made a LOT of sauce, but I didn't mind - I served this with fresh snow peas and the sauce was great on the peas. I might even add snow peas to this recipe next time. I did add a bit of mustard to the sauce - adds a nice flavor.

Asparagus Casserole I

Delicious! I used fresh asparagus (didn't steam first, just threw it in), cut the butter down a little, and cut down the amount of crumbs a little. I can see where canned asparagus wouldn't be good - I'll only make this recipe with fresh. Oh, and I used more asparagus than what was called for.

Asparagus Cashew Rice Pilaf

Good - was a little bland, but it was a good combination of flavors. I didn't follow exactly - I cooked the rice in my rice steamer in chicken broth. I added about a cup of water to the spaghetti mix, and that was just the right amount. I also roasted the asparagus and cashews in the oven for a few minutes.
