Sherry Sour Cream Chicken

Wow, simple, fast and easy to cook, and so good! I added a few mushrooms, but other than that followed the recipe. Sauce is delicious (a little thin, but full of flavor). We served it over wild rice mix and asparagus - perfect meal!

Spicy Blue Cheese Hamburgers

This was SO delicious! The burger mixture was a bit messy, but I put some breadcrumbs in to help hold it all together (I also used super spicy wing sauce so I didn't use a whole 1/2 cup) and we LOVED it. Just a little mayo, some tomato and lettuce and this was such a flavorful burger. We'll make often. Make sure you use a good strong blue cheese - delish!

Cinnamon Cranraisin Bread

Great - I made in the bread machine and put the craisins in at the beginning and they were mostly whole - I can't wait to try this bread in french toast. YUM!

Orzo and Tomato Salad with Feta Cheese

Yum! I didn't have lemon juice so used lime juice, and I reduced the EVOO a bit. Used jalapeno stuffed green olives for a little kick. Great salad!

Maria's Paella

Wow, was this delicious! I made a few alterations - a friend who lived in Spain said you can substitue turmeric for the saffron without much taste difference and it worked great. I also had a bag of frozen paella seafood mix from Sam's Club - so I just guesstimated the amount needed. Use chicken breast chunks instead of thighs. I also followed the suggestion to substitue a can of Rotel (used Habenero Rote) for part of the diced tomatoes and that added GREAT flavor. This makes more than enough for 6 people though - we have a ton of leftovers, although that's ok as I don't mind leftovers! Thanks for an awesome recipe!

Awesome Baked Sea Scallops

Very easy, flavorful and quick. I would definitely cut the butter at least by half, and I didn't mix the crumbs with oil - I sprinkled the crumbs over the top then gave them a quick spray with Pam - tasted just fine and reduced the fat content.

Fresh mozzarella really does taste great, but if you're not planning on eating all of this in one sitting, you might want to consider using regular mozz. Fresh tends to break down a bit if it sits in the oil and vinegar for a long while.

Eggplant Sandwiches

This is wonderful, and I like the eggplant all on its own as well. I will make this often. Tip - japanese eggplant are MUCH better (less bitter) than regular eggplant.

Parmesan and Broccoli Stuffed Potatoes

Wow, this was different and very good. We served it with fish. I followed one of the other reviewers recipes for the parmesan sauce - mayo, parmesan and garlic but I also added some milk. I also didn't have time to scoop the potato out of the skin, so I just put the broccoli and sauce over the potato halves - loved it!
