Pub-Style Vegetarian Chili

Very good - a little time consuming to chop the veggies but it was worth it. I didn't have mushrooms so left that out. I cut the garlic back a bit - glad i did. I did not saute any of the veggies - just threw everything in my crockpot on low for several hours. Turned out perfect. I also just used the whole can of tomato paste, a part of a can of pizza sauce and then a quart of home-canned tomatoes. Will make again - will definitely use mushrooms next time. :)

Easy, Cheesy Tortellini Bake

Excellent - however I made some changes. I didn't have alfredo sauce, so I mixed a quart of my home-canned spaghetti sauce with about 6 oz of cream cheese, some Italian seasoning and fresh spinash since I didn't have canned. I reserved about 1.5 cups of the sauce and used a 20 oz bag of tortellini and that was about the right amount of sauce. I used about half the cheese as it called for and it was just fine. I will broil my baked pasta dishes from now on - it gave it such a nice crusty top!

Tofu Masala

Pretty good! I had to make a few changes - I didn't have any chickpeas so used blackeyed peas (tasted great) and no fresh tomatoes so used some sundried that had a little Italian seasoning on them (was good too). Also did not add the additional TB of oil, and no salt for health reasons. Very easy.

Pumpkin Muffins with Streusel Topping

D'lish! I followed other comments and used the whole can of pumpkin and just omitted the applesauce. I forgot to put in the raisins, so I put them on top and then omitted the streusel top. They are absolutely fabulous!

Caramel Corn Treat Bags

Turned out perfectly! I made a triple batch, cooking it in two batches. We ate almost too much the first night to enjoy anymore (but I'm sure by tonight we'll be ready to eat some!).

Zucchini Skins

Excellent! I followed one of the suggestions and just microwaved the zuchinni for 4 minutes, then followed the rest of the directions. I used plain Greek yogurt instead of sour cream, and cut back some on the mozzarella. Next time I'll use more cheese and maybe change up the kind of cheese. The parmesan is really what makes this dish.

Smoky Sausage Penne

Very good with a few tweaks. Definitely needed diced green pepper and onion (sauted with the sliced sausage) and used Rotel in place of the diced tomatoes. Instead of smoked sausage I used venison ring bologna and that was perfect. Easy and filling!

Cheese-Stuffed Giant Meatballs

Not bad, but not great. Sauce was a little metallic tasting, but this was a super easy meal. I added some garlic and parmesan, and used lean ground turkey instead of beef.

Barlow's Blackened Catfish

Holy sinus clearing spices! So, I didn't read the reviews before making this. however, my husband loves spicey and it was actually really good, just a bit heavy on the cayenne. :) I will reduce the cayenne a bit next time but this is easy and delicious!

Tangy Cauliflower

Very good, super easy. At first I didn't think there would be enough sauce, but it was great. I misread the instructions and microwaved the cheese with the rest of the ingredients then just pourded over the hot cauliflower and that worked fine.

Dijon-Dill Brussels Sprouts

Very good and super simple. Based on the reviews I was expecting a really strong flavored sauce and it definitely was not - I would rate it more on the light side. I love dill and it really just tasted like a hint of dill and lemon. I had to steam my sprouts 15 minutes - they were larger than normal I think. As a new sprout aficionado, this will be a regular recipe at our house.

Yum! My hubby loves Chorizo and these were a huge hit! I love that you can mix up different veggies according to taste - i served with a quinoa dish and it was perfect.

Simple Slow Cooker Pork Chops

well, I made a bunch of substitutions since I didn't have everything - canned mushrooms instead of fresh, one can cream of chicken soup and one can of chicken gravy, and sweet potatoes instead of white, and it ended up absolutely delicious!

Cabbage Beef Soup

Very good! Used a bag of pre-shredd cabbage and carrots, and followed some of the reviews and used one can kidney beans and one can chili beans. Also used a large 24 oz can of Rotel in place of the tomato sauce, and just 1 cup of water. Yes, it is very much like chili with cabbage, but I will definitely make again!
