Impossibly Easy Ham and Asparagus Pie

Very very good! I made it exactly as written except for omitting the ham. It would be very easy to substitute various veggies and meats but it was great with just the swiss cheese and asparagus. It did take a bit longer to bake, but was super easy and I'm glad it made a large pan so I have leftovers!

Simple Greek Couscous

Pretty good and very easy. I used whole wheat couscous, and didn't have sundried tomatoes (although i'm sure they would be awesome in this recipe). I just used some fresh tomato, and then added oregano and basil, along with a little EVOO. Will definitely be making this fast dish again.

Cranberry Orange Bread

This was pretty good - definitely super moist (almost too much so). I substituted one cup of whole wheat flour, used vanilla fat free greek yogurt in place of the sour cream. Next time I might try to substitude applesauce for half the butter, or just cut the butter down a bit. The can of oranges I opened were huge slices, so I cut them into each into three pieces. Next time, I might add nuts, or some type of crumb topping.

Sausage and Vegetable Risotto

This was great - although next time I definitely won't use the added oil - the sausage was plenty greasy to cook the onions. Also didn't have arborio rice so used brown instead, knowing it wouldn't get to the creamy consistency of risotto, but that was ok. Still turned out to be a great meal (even with canned asparagus since I didn't have fresh)l.

Parmesan Brussels Sprouts

We made this as a really fast side dish. Didn't have parmesan but subbed asiago as anothe reviewer recommended and it was very good. Didn't use nearly as much butter as it called for (about 1/3). Added a few TB of water to help steam the sprouts. Will definitely make again.

Kielbasa with Brussels Sprouts

Easy and delicious. Be careful not to cook the brussels sprouts too long or they will get mushy. I also used water instead of additional fat in the cooking.

Margarita Grilled Shrimp

Excellent - we used HUGE shrimp (8 per pound) and I was a little worried the marinade would overpower the shrimp. We grilled them and served along with bacon-wrapped filet for a surf and turf Valentine's dinner. Perfection.

Mini Chocolate Chip Shortbread Cookies

Very very good - I made 2 and 2/3 batch (because that's how many chips I had) and used all butter, 1 stick margarine. was nervous as I've not had a lot of luck with shortbread BUT this dough was awesome to work with. We ended up though creating 4 times the number of cookies called for - if we had made it according to the directions the cookie logs would have been way too big. The end result was thumb-sized cookies. Because there were so many more cookies I was worried we didn't have enough of the melted chocolate so instead of dipping, just put the melted chocolate in a bag, snipped the end and drizzled. Much faster, same taste. I'm actually glad we didn't dip - might have been too chocolatey. Also, next time might use just a bit fewer chips in the dough - there are a LOT. But overall, delicious, easy and will probably be one of my Christmas standards from now on.

Pub-Style Vegetarian Chili

Very good - a little time consuming to chop the veggies but it was worth it. I didn't have mushrooms so left that out. I cut the garlic back a bit - glad i did. I did not saute any of the veggies - just threw everything in my crockpot on low for several hours. Turned out perfect. I also just used the whole can of tomato paste, a part of a can of pizza sauce and then a quart of home-canned tomatoes. Will make again - will definitely use mushrooms next time. :)

Easy, Cheesy Tortellini Bake

Excellent - however I made some changes. I didn't have alfredo sauce, so I mixed a quart of my home-canned spaghetti sauce with about 6 oz of cream cheese, some Italian seasoning and fresh spinash since I didn't have canned. I reserved about 1.5 cups of the sauce and used a 20 oz bag of tortellini and that was about the right amount of sauce. I used about half the cheese as it called for and it was just fine. I will broil my baked pasta dishes from now on - it gave it such a nice crusty top!

Tofu Masala

Pretty good! I had to make a few changes - I didn't have any chickpeas so used blackeyed peas (tasted great) and no fresh tomatoes so used some sundried that had a little Italian seasoning on them (was good too). Also did not add the additional TB of oil, and no salt for health reasons. Very easy.

D'lish! I followed other comments and used the whole can of pumpkin and just omitted the applesauce. I forgot to put in the raisins, so I put them on top and then omitted the streusel top. They are absolutely fabulous!

Zucchini Skins

Excellent! I followed one of the suggestions and just microwaved the zuchinni for 4 minutes, then followed the rest of the directions. I used plain Greek yogurt instead of sour cream, and cut back some on the mozzarella. Next time I'll use more cheese and maybe change up the kind of cheese. The parmesan is really what makes this dish.
