Whole Grain Penne with Radicchio, Butternut Squash and Parmigiano-Reggiano Cheese

Good, but I would never dice raw squash - it's just too hard. I microwaved it for about 8 minutes, then diced. This had really interesting flavor and we really enjoyed it. We did add a pork chop to it for some protein.

Mushroom Sauce

This is so delicious. I subbed 2 TB cornstarch for arrowroot, and onions for shallots since that's what I had. I used a few more mushrooms than called for. So easy, I don't know why we don't make sauces like this more often! Served over minute steaks and whole wheat gnocchi - perfect meal.

Homemade Spinach Pizza Rolls

Delicious and easy, but I found the foil was just an added step I didn't need. Will just bake on stoneware in the future. Definitely do NOT use more sausage than the recipe calls for!

Easy Flank Steak Fajitas

Very good flavor, and will definitely use this recipe in the future. My issue is that I'd rather grill the steak and sauté the veggies and not waste foil on something like this. I use foil a lot but it seems unnecessary in this recipe.

Banana Walnut Bread

Very good, moist and easy to make. I was surprised there was no cinnamon or spices, but it was good. I subbed pecans since that's all I had and it was great. I might add a little nutmeg next time.

Baked Smoked Sausage Spaghetti Casserole

Very very good, however I have to admit I couldn't find the rope sausage and ended up having to use Johnsonville Italian sausage (which my husband smoked on the smoker first). I also used my own homemade pasta sauce (similar recipe) and a few sundried tomatoes for a big of extra tang. Easy!

Whole Grain Spaghetti with Cherry Tomatoes, Marinated Chicken Breast and Pesto

I agree with many reviewers about it needing something - I added more pesto and that helped (I make my own pesto with fresh basil and I think that has a stronger flavor so that might also have helped). I added pine nuts for a little crunch. I will make again as it was easy and pretty healthy.

Blue Cheese Chipotle Venison Burgers

mmm, flavorful, moist and very spicy! I did add a bit of extra adobo sauce to the burger mix, and instead of banana peppers, I used some canned mixed hot peppers to the onion mix. I wasn't convinced the spicy and blue cheese would be a hit, but it definitely was great. We cooked these a little rare, and I didn't use quite as much blue cheese. Oh, and made them into 8 patties - they would have been huge otherwise.

Cheesy Broccoli Quinoa

this is awesome. I love quinoa but have trouble finding really good recipes other than my standard pesto quinoa that I found on this site. This one is now my #2 go to. So easy and quick! I cut down on the cheese - it's quite a lot.

Impossibly Easy Ham and Asparagus Pie

Very very good! I made it exactly as written except for omitting the ham. It would be very easy to substitute various veggies and meats but it was great with just the swiss cheese and asparagus. It did take a bit longer to bake, but was super easy and I'm glad it made a large pan so I have leftovers!

Simple Greek Couscous

Pretty good and very easy. I used whole wheat couscous, and didn't have sundried tomatoes (although i'm sure they would be awesome in this recipe). I just used some fresh tomato, and then added oregano and basil, along with a little EVOO. Will definitely be making this fast dish again.

Cranberry Orange Bread

This was pretty good - definitely super moist (almost too much so). I substituted one cup of whole wheat flour, used vanilla fat free greek yogurt in place of the sour cream. Next time I might try to substitude applesauce for half the butter, or just cut the butter down a bit. The can of oranges I opened were huge slices, so I cut them into each into three pieces. Next time, I might add nuts, or some type of crumb topping.

Sausage and Vegetable Risotto

This was great - although next time I definitely won't use the added oil - the sausage was plenty greasy to cook the onions. Also didn't have arborio rice so used brown instead, knowing it wouldn't get to the creamy consistency of risotto, but that was ok. Still turned out to be a great meal (even with canned asparagus since I didn't have fresh)l.
