My Dad learned to cook in a french New Orleans restaurant, he shared some techniques along the way, his 2nd wife, my step-mother taught me so many critical steps and tricks.
My cooking triumphs
When I follow the recipe. Acquiring Michael Ruhlman's 20 book of cooking rules and his Ratios book as well as his co-authored Charcuterie really filled out my library.
My cooking tragedies
When I experiment in too many directions simultaneously and have to throw it out.

Braseltouille - Meatatarian Ratatouille
Great recipe, this is not the first recipe I have encountered that instructs reserving some liquid and then not mentioning where it is to be used.

Real Hummus
Made as above and loved it. Had to try something on my second batch, could not find my tahini so I had picked up a packet of chestnuts on a lark. Started with those and came up with a whole different dish.

Curried Butternut Squash and Pear Soup
We got one of the 10 pound beauties so I made this last week and this week. Last week I froze two quarts of soup and this week it was all gone. Last week I adhered exactly this week I added one-half pound of carrots. I only had two small pears so threw in a can and this recipe is a keeper. Makes squash a favorite in my house. Note: used the immersion blender following other reviewers suggestions.
