About this Cook
Mother was assistant to president of publishing company and not much interested in cooking, Learned much from step-mom who had home economics BA. Two Wives who were glad to let me hog the kitchen. I like deciding the menu and haunting the markets.
My favorite things to cook
Love all the wonderful contributions on allrecipes.com and the pro capabilities for printing with comments! The advice and recipe suggestions are sterling.
My favorite family cooking traditions
My Dad learned to cook in a french New Orleans restaurant, he shared some techniques along the way, his 2nd wife, my step-mother taught me so many critical steps and tricks.
My cooking triumphs
When I follow the recipe. Acquiring Michael Ruhlman's 20 book of cooking rules and his Ratios book as well as his co-authored Charcuterie really filled out my library.
My cooking tragedies
When I experiment in too many directions simultaneously and have to throw it out.

Deluxe Corned Beef Hash
My wife said it was the best she has ever had (she is Irish). I incorporated all the review tips. Used braised corned beef, extra baked ahead potatoes, carrots, herbs and cooked uncured smoked bacon first to crumble stage and added at end. Did not need olive oil or butter, had too much grease and had to pour it off as the corned beef rendered way more than I had anticipated. Was so good! I agree with Debra as I also buy extra and braise one just for hash.

Braseltouille - Meatatarian Ratatouille
Great recipe, this is not the first recipe I have encountered that instructs reserving some liquid and then not mentioning where it is to be used.

Real Hummus
Made as above and loved it. Had to try something on my second batch, could not find my tahini so I had picked up a packet of chestnuts on a lark. Started with those and came up with a whole different dish.
