Banana Banana Bread

This recipe is excellent just how it is. It is also very forgiving if you want to make changes depending on what you have. I have made this recipe probably 10 times, and on more than one occasion I have run short of bananas. Substituting with other wet fruit puree works great. I have also met the last 1/2c or so of volume with chai tea mix - which was INCREDIBLE! Add the spices (nutmeg, cinnamon, etc) you like or leave it as is. It's a winner overall. The last time I made this, I used 100% whole wheat all purpose flour. I reduced the volume of flour by 1/3 c to accommodate for the denser flour and it worked out really well.

Big Game Day Chili

Excellent recipe. I made an adjustment and only used the can of cream corn instead of 1/2 a can of normal corn and 1/2 a can of creamed corn. The consistency was exactly what I was looking for. Creamy and pudding like! Superb!

Super-Delicious Zuppa Toscana

Really nice flavor, and very satisfying - really delicious served with some crusty rustic bread. My husband prepared the recipe exactly as directed, but we did have very spicy Italian Sausage - so it had a very nice kick to it. Next time I make this, I will omit the bacon because I don't like the texture of gloopy bacon. I will also try to reduce the fat by using italian turkey sausage and whole milk instead of heavy cream.

Turkey and Quinoa Meatloaf

Moist meatloaf with a wonderful flavor! I was a little worried about the texture being so moist - and I thought it would just sort of lose it's shape on the tin when I turned it out - but it stayed relatively mounded. The only substitution I made was I used chicken broth instead of water to cook my quinoa.

Very Berry Muffins

Perfect amount of sweetness just as it is! I added 1/4c of sliced almonds and 1/4c of dark chocolate chips for fun :) I was able to get 18 muffins out of this recipe.

Proper English Cottage Pie

Brilliant! I prepared this for my British husband with a few alterations, and he *really* enjoyed it! I reduced the cinnamon to 1/4 tsp, and next time I'll use even less. I also used less cheese since we're trying to lighten things up around here. And, because we didn't have ground beef, I used ground Bison - let me tell you... it was AMAZING! Great recipe!

Barley Bake

I've prepared this dish twice now. I recommend covering the barley bake for the first 45 minutes, stirring, then cooking for another 45 minutes uncovered. The second time I made it, I threw in about a cup of shredded carrots in the last 15 minutes and it made the dish pop with color! The nutty flavor of the barley and the pine nuts is so lovely. Ingenious recipe! I love it, and I plan to use it at Thanksgiving this year!

Asian Potato Salad

Really unique flavor, and just what I was looking for. I'd also never worked with bok choy before, so I really enjoyed this recipe, not only for its lovely flavors, but for introducing a new ingredient in to my repertoire.

Exquisite Pizza Sauce

This sauce is SO incredibly easy, and extremely tasty. No cooking, and just a little preparation time. Tip: Naan bread makes an excellent personal pizza crust!

Mini Cheesecakes III

I made these little guys for a birthday party with 6 guests. All I can say is that each person was disappointed when they heard there was only 1 per person! They were that good! I was very pleased with the portion size, since I'm watching my calories.

Irresistible Double Chocolate Muffins

I have made these muffins twice now - and they are definitely worth all of the effort. The first time I made them, they were for my son's 4th birthday party. I was nervous about the texture being a bit too dense for passing as "cupcakes", so I used half all purpose flour and half whole wheat. I have always used apple sauce instead of pumpkin because I've never had any on hand. The second time I made them, I even made the apple sauce from scratch! These muffins are absolutely lovely. I'm grateful to have it in my box!

Wheat Germ Whole-Wheat Buttermilk Pancakes

These pancakes are incredible. I didn't have pastry flour, so I used regular Whole Wheat flour. They still turned out incredible! I mixed all the wet ingredients in one bowl, all the dry ingredients in another bowl, then combined the two, mixed lightly and started cooking the cakes. They were light and airy. Very nice.

Broccoli and Tofu Stir Fry

As long as you don't skimp on the garlic, this stirfry tastes lovely. I marinated the tofu for a few hrs in Soy sauce and sesame oil, but I put it in too early and it ended up getting all mushy. I recommend frying up the tofu first so it keeps its shape better.

Spiced Pumpkin Seeds

This recipe and its comments helped guide me to making some super delicious pumpkin seeds! I had 3 cups of pumpkin seeds to work with. So I used 3 Tbsp of olive oil, 2 Tsp of Lawry's Season Salt, 1 Tsp of garlic powder, 1/2 tsp of onion powder and 1 tbsp of Worcestershire sauce. I evenly coated two cookie sheets with the seeds and cooked them for 1 hr at 300 degrees, stirred them up after the hour was up, then put them back in for another 10 minutes.

Morning Glory Muffins

I made these slight revisions: 1 1/2 C All-Purpose Flour 1 C Whole Wheat Flour 1 C Apple Sauce (chunky Natural style) These muffins are INCREDIBLE. For their low caloric and sodium levels - they are moist and DELICIOUS! My 4 year old helped me make these and he really enjoyed pouring in all the many ingredients.

Zucchini Brownies

Oh my goodness - this recipe was INCREDIBLE! I suggest adding another 15 minutes to the baking time to ensure that you're not trying to cut batter squares. My 4 year old really enjoyed helping me mix this together, and I was able to let him eat batter without worry, since there was no egg in the recipe!

Best Bread Machine Bread

Brilliant bread recipe! I followed the suggestion of increasing the salt - I replaced one tablespoon of sugar with a giant squeeze of honey, and used Safflower Oil rather than Vegetable oil. I've made this bread twice and I had excellent results both times in the bread machine.

World's Best Lasagna

Very good sauce recipe! I made this at the tail end of the gardening season, so I had a large stash of fresh tomatoes to work with. I scored, blanched and ice bathed about 13 oz of tomatoes instead of using the canned sauce. What a treat!
