Famous No Coffee Pumpkin Latte

I love it, the husband loves it, the kids love it. I used turbinado sugar and soy milk. I used cinnamon and pumpkin pie spice, more spice than the recipe called for. Delicious! Thanks for sharing!

African Peanut Soup

The best darn soup I've had in a long time! I used quinoa instead of rice. I used frozen tri-color bell peppers. I added a shredded carrot and little extra peanut butter . Super Yum!

Apple Crisp IV

This crisp got rave reviews from my camping friends. I cooked this in a charcoal-powered box oven, and we couldn't have asked for a better dessert on a chilly night. I prepped the apples the day before: peeled & chopped Granny Smith & Empire apples, added some lemon juice, lots of cinnamon and some turbinado sugar... put this all in a gallon ziplock and kept it chilled. I also prepped the dry ingredients a day early, I didn't use nutmeg. At the camp site, I added Earth Balance margarine to the dry ingredients - mixed it in the bag. I baked this in a disposable aluminum baking dish. Thanks for a great recipe!

Fruit Cobbler

I made this with apples, lemon juice and lots of cinnamon. I also added vanilla to the dough. I had a lot of dried apples on the top - they didn't sink into the batter, as I had expected them to, but it was still very delicious. The dough was great! I might have used a smaller pan than what was called for, so that may have been to blame. I used coconut milk kefir instead of milk. This recipe reminded me of bread pudding with baked apples.

Peanut Butter Banana Bread Recipe

Really good. I liked the unusual addition of peanut butter. I added some cocoa powder to the dry ingredients, used coconut milk kiefer instead of yogurt, and replaced the eggs with flax meal (2 T soaked in 6 T water). I used canola oil instead of olive oil. I used all ww pastry flour for the flours. We couldn't wait for the bread to cool, and it was crumbly when we cut into it, but the remainder firmed up as it cooled.

Whole Wheat Chocolate-Blueberry Cake Recipe

Really great! I replaced the egg with flax meal (1 T soaked in 3 T water). I did not make the frosting. The cake was well-received, and nobody guess that there were blueberries hiding inside. Will be making this again soon. Very easy!

Chocolate Fudgy Oatmeal Cookies

This is the best chocolate cookie ever! It reminds me of a healthy (because it has oatmeal!) portable brownie. The dough is sticky and forming the cookie was time consuming.

Coconut Tofu Keema

I have this simmering on the stove right now; it smells so good and the samples are delightful! I love the spices. I reduced the tomato sauce to 1 3/4 cup (15 oz), and it seems like plenty... I wouldn't add any more than that. I added one fresh chopped tomato, and I think cauliflower would be a nice addition. I'll be serving this with basmati rice. Next time, I'll add the peas just before serving... they seemed over-cooked after simmering for a half hour. Also, this was fairly greasy, I will use lite coconut milk next time. A bit of cinnamon might be a nice addition. Update: Much improved with lite coconut milk - the spices are more pronounced. Also, I added the cumin, curry and ginger while the onions and tofu were frying - it made the tofu tastier. I did add a bit more red pepper paste. Love it! This is going into regular rotation.

Mexican Pintos with Cactus

I used this recipe for instructions on how to cook cactus leaves - they turned out great! After they were cooked, I added them to fajita veggies: onions, garlic and zucchini. We made "haystacks": rice, beans, fajita veggies, and salsa. Yum!

Kickin' Collard Greens

Delicious! This is my first time cooking with collard greens; I didn't realize they took so long to cook down, and the longer they cook, the more they melt in your mouth. Mmmmm. I made this vegetarian by omitting the bacon and adding some liquid smoke to the onions. I also used veg broth instead of chicken. I added a pinch of brown sugar and a bit of apple cider vinegar, as suggested by other reviewers. I used Cholulua hot sauce instead of pepper flakes and I also added some dried minced onions. Thanks for the great recipe, I WILL be making this again!!

Watermelon Lemonade

THIS IS SO GOOD!!! I like this better than plain lemonade... a lovely combination of sweet and sour, like a Warhead candy. I had simple syrup on hand, and I only used 1/3 cup... I believe this would have been less sugar than the recipe called for. I blended the watermelon and lemon juice together - did not strain - I like my lemonade pulpy. Thanks for the great recipe, Docswife!

Oregano-Lemon Chicken

I made the sauce for this recipe to go with homemade Chicken-Style Seitan cutlets (fake chicken made from wheat gluten), seitan recipe from "Vegan Yum Yum" cookbook. I substituted agave nectar for honey. The sauce was on the bland side, next time I'll add a bit more salt and slice the "chicken" into strips, but otherwise, this is a great recipe. I served it with capellini pomodoro and steamed pea pods.
