World's Best Pasta Sauce!

All I can say is this is my new favorite sauce! I love the tastes and texture of this sauce and plan on using it again and again. It's good enough to eat just on bread!

Hawaiian Chicken Kabobs

Absolutely delicious! We are veggie eaters so we added cherry tomatoes, peppers and onions to the skewers. I also left some of the pineapple juice for the marinade and added some chopped garlic. The outcome was terrific! I doubled the recipe for 7 adults and three children and had enough for everyone to have two skewers. I think that I might just triple the recipe next time!

Chicken Chimichangas with Green Sauce

Yum! I was hesitant about the green sauce only because of the cream of chicken soup. I didn't think that it would stay true to the Mexican chimichangas. I was wrong; it was great. the chimichangas themselves were wonderful with the chicken, cream cheese mixture. The shells were crispy but not soaked with oil (I let them sit on paper towel after being fried). The whole dish was very easy to make. I ended up yielding 12 for 5 people and they were gone before dinner was done!

Layered Chicken and Black Bean Enchilada Casserole

I followed the recipe with the exception of the size pan. I used a square glass casserole as well as a rubbermaid Premier non staining 9-cup container (as the accompanying video did). I put the Rubbermaid container in the freezer for future use and baked the other. We were only feeding four people and it was more than enough. The dish came out great. I was afraid that the whole thing would turn out soggy but it did not. the sides and top were slightly crispy. The cheese was melted perfectly and the combination of the flavors were perfectly Mexican! We let the dish sit for 15 minutes before cutting and it held its shape. We added a dollop of sour cream and sliced olives to the top and served as is. I will be making this recipe many more times, I'm sure.

Orzo with Parmesan and Basil

I've been meaning to make this for a while now & I finally did...sorry I waited so long. This recipe was wonderful. I took the advice of another reviewer and added 1/2 cup of sour cream and about a cup of shredded cheddar cheese. Everyone was looking for seconds!

Irish Chicken and Leek Pie

I made this for my family and, surprisingly, they all enjoyed it. I made a few changes though...I sauteed the leeks and onions in 1/2 a stick of butter. In a separate pot, I added an egg with the chicken stock and heated until thickened. Then I added the leeks & onions to it. I cut up the ham slices and layered it along with the cubed chicken and the leek mixture. Instead of using pie crust, I used puff pastry and just laid it across the top of the casserole. I turned the heat up to 375 degrees F. Next time I think I'll try making this in a 9x13 and covering the entire top with puff pastry so that each serving has its own little piece of puff!

Mom's Zucchini Bread

Great zucchini bread! I took the advice of some past reviewers and made some modifications: I increase the zucchini to 4 cups, I used 1/2 cup veggie oil and 1/2 cup of applsauce instead of a full cup of oil. I used 1 cup of light brown sugar, 1/2 cup granulated sugar and 1/2 cup of vanilla sugar (just because I had it). I only had cake flour and pecans at the time, so that's what I used. The recipe yielded two loaves. They were delicious! One loaf was gone in less than 30 minutes (6 people in my family). The other loaf made it until the next afternoon. I will definitely use this recipe again and again. I've already passed it onto a friend.

Whipped Cream Cream Cheese Frosting

I was expecting light and fluffy frosting with a cream cheese taste. What I got was not light and fluffy but somewhat thick and way too soft to keep any kind of form. I will move on from this recipe and try to find a better cream cheese frosting.

Amazingly Easy Irish Soda Bread

Truly easy to prepare and tastes wonderful!. I made this for my family quite a few times and have served it with Corned beef and each dish compliments each other. I too used a Kitchen Aid Stand mixer and the preparation was incredibly easy. I would definitely recommender this soda bread recipe to anyone. So simple to make and the taste is great!

French Onion Soup Gratinee

My husband is a French Onion Soup aficionado. He craves French Onion Soup every time we go out to a restaurant. I have never tried to make it home until now. I followed the recipe using French bread, Swiss cheese and Asiago cheese. I did sprinkle a little freshly grated Parmesan cheese on top which was not in the recipe. The taste of the broth had a very nice flavor, compliments of the Worcestershire sauce and balsamic vinegar. I might try using a little more Worcestershire next time. My husband really liked it as did our other guests. I would definitely make this recipe again.

Homemade Tomato Sauce I

This tomato sauce was generally a good recipe but I do have to agree with the other reviewers who said it was bland. I added more herbs as well as more wine and tomato paste. It was good but I will also try other tomato sauce recipes before making this one again.

I saw this recipe featured on St. Patty's Day and saved it. I just now made it and am sorry that I didn't make it earlier. I used kale instead of broccoli only because I had kale in the fridge and also wanted the dish to turn out greener in color. Yum! The flavors of the leeks, potatoes and kale together along with the little bit of ground mace was delicious. Just be careful on how much mace you put into this dish because it can overwhelm the other flavors. The recipe says a pinch and it means a pinch. I always tend to go heavier on herbs and spices, but not on mace because it's strong. The overall appearance is exactly as photographed and is a crowd pleaser. I really enjoyed Colcannon.

Alfredo Sauce

An excellent recipe. the sauce came out thick and creamy and tasting better than any other Alfredo sauce I have ever had. I followed the recipe but did add one more clove of garlic only because we are all garlic fanatics here! I will definitely make this again.

Best Ever Caramel Apple Crisp

I made this today for a dessert and followed the advice of past reviewers. I used a 9x13 baking dish, doubled the cinnamon, added nutmeg and allspice. I also doubled the lemon juice, omitted the water and added Mexican vanilla. I poured pre-made caramel sauce - about a 1/4 cup - over the apples and then put the crumble mixture on. It came out great...sweet but not overpowering. The top was crispy and the apple mixture was a perfect texture (not mushy at all). The taste was spot on. I served it warm with a drizzle of caramel sauce and a scoop of vanilla ice cream. Yum! I will add this to my list of seasonal apple recipes. Thank you, St. Matthew First Graders!

Perfect Flat Iron Steak

I know that flat iron steaks are the new "in" steaks nowadays, so I was keen at trying them as I never had one. I came across this recipe and decided to take a ride to my local butcher's. I brought the steaks home and followed the recipe to a tee. The outcome was great! The steaks had a wonderful flavor from the marinade and were very juicy and tender. I cooked them medium rare (one medium) and they were perfect. I sautéed some button mushrooms in butter, olive oil and onion powder and served a small amount on top of the steak. I would make this recipe again and also use this cut of steak again.

Downeast Maine Pumpkin Bread

This is by far the best pumpkin bread I have ever made. the bread is moist and flavorful and oozes Autumn. Easy to make and great tasting. I always double the batch because in my family, the first three loaves last for about thirty minutes! Even the pumpkin haters in my family gobble it down. I too left the recipe as it was all the times I have made it and would not change it only because it is so good "status quo".

Easy Cheesy Chicken I

If I could give this recipe six stars, I would! It is soooo easy to make and tastes great. Everyone I have ever fed it to loves it and wants more (and the recipe). The "soup sauce" is warm, creamy and good tasting". I used two cans of cream of chicken soup, 2 cans of Cheddar soup and a bit more sour cream. The chicken is always moist, tender and tasty. Served over a bed of rice, it's the perfect feel good, cold day, easy made comfort food!

Peach-a-Berry Pie

Made this pie over the summer when one of my friends brought us some fresh peaches (I had the raspberries). Was it yummy! The pie was full of flavor and not too sweet; it held together well, was nice and juicy, and went great with a scoopful of vanilla bean ice cream. By the end of the evening, there was one piece left! I would make this pie again.
