Turkey Macaroni Salad

Delicious!! I used a smoked turkey leg (which I diced), Wacky Mac spiral noodles, yellow onion, light mayo, and light sour cream instead of yogurt. I'm sure I'll make this again and often. Thanks for the great recipe!

Four Layer Delight

This is the same recipe I've been making for many years, and it always comes out good. I made only half a recipe which fit perfectly in a 9-inch pie pan. I used chocolate pudding and sprinkled the top with toffee bits.

Cassata Cake

I made my cassata cake using this recipe for the cake and syrup parts only. The cake was very light and moist. For the filling, I used 2 lbs. ricotta cheese, 1 cup confectioners' sugar, 1 tsp. rum extract, 1/4 cup mini chocolate chips & 1/4 cup chopped maraschino cherries. For the frosting, I used the "Cassata alla Siciliana" recipe on this site. This cake takes a considerable amount of time and work to make, but it's worth it.

Pumpkin Pie Squares

I made the recipe as written. I didn't care for the crust. It came out very hard and dry. The filling was OK, except I didn't care for the cloves, which gave it slightly bitter taste. I'd much rather have traditional pumpkin pie, which is about the same amount of work....less work if you use a pre-made pie crust. Won't make again.

Potato Chips

These came out GREAT! I like the idea of using Pam instead of oil, and they came out as good or better than the ones I made w/oil. I didn't use parchment paper, just sprayed the plate w/Pam. Depending on how thin the slices were, they took anywhere from 3-1/2 to 8 minutes to cook. I cooked them until they turned brown, and they got very crispy. Thanks for the great recipe, Bobbi!

These came out GREAT! I used the custom recipe from Bobbi which calls for Pam cooking spray instead of oil. I didn't use parchment paper, just sprayed the plate w/Pam. Depending on how thin the slices were, they took anywhere from 3-1/2 to 8 minutes to cook. I cooked them until they turned brown, and they got very crispy. Thanks for the great recipe, Jessica!

1-2-3 Vegetable Chili

I used 3 small zucchinis, which was about 5 cups, so I added a couple small cans of tomato sauce. I also increased the chili powder to 1 tablespoon. This is a very delicious, healthy meal. I'm sure I'll make this often.

Irish Soda Bread

I used 3/4 tsp. anise extract instead of caraway seeds and 2 cups raisins and 1 cup craisins, but 2 cups of fruit total would have been plenty. I only baked it for 60 minutes, and it was perfectly done. Very good taste and nice texture; tasted even better the next day. Good recipe!

Nana Dot's Irish Soda Bread

I substituted 3/4 tsp. anise extract for caraway seeds. Recipe made 2 small loaves, which tasted very good; more like a scone or muffin texture. It was moister and tasted even better after a couple of days. Good recipe!

Chocolate Mint Dessert Brownies

I substituted I Tbs. water, 1/2 tsp. mint extract and 3 drops green food coloring for the creme de menthe liqueur (as suggested on the Hershey's web site). The cream center and glaze are good, and everything tastes OK together, but the brownie part is very dry and kind of tasteless. A little vanilla would help, but I would probably just use a different brownie recipe. Even a brownie mix (ugh!) would be better.

Coffee Shake

Frap-a-licious! I used 1/2 cup light vanilla soy milk, increased the coffee to about a tablespoon and used Splenda instead of sugar. It was low fat and low cal, but tasted great! I'll definitely make this again and often. Thanks for the great recipe!!

Zucchini Cornbread Casserole

The first time I made this, I took reviewers' advice & drained the zucchini. It came out very dry and oniony. The next time, I didn't drain the zucchini, sauted the onion in a little butter before adding it, and only used 1 cup cheese which I mixed in (I didn't put any cheese on top). I baked it in a souffle dish for 1 hour uncovered, and it came out great! My daughter keeps asking me when I'm going to make this again.

Oat Applesauce Muffins

Very good healthy recipe! I only let the oats sit in the milk a few minutes (not 2 hours), I used 1/4 cup brown sugar and 1/4 cup honey, and I added 3/4 tsp. cinnamon and 1/2 tsp. nutmeg for added flavor. Because there's no fat in the recipe, they stuck to the paper liners while they were warm. After they cooled completely, the liners peeled off easily. I recommend either not using liners and spraying the pan with Pam or spraying the inside of the liners with Pam.

Jo's Rosemary Bread

Baked perfectly in my bread machine without any changes to the recipe. The texture was extremely light and airy and the crust was very nice and crispy. I didn't find the Rosemary overpowering, as some reviewers did, but I will probably use a different spice the next time just out of personal taste. Overall, a very good 5-star bread.

Buffalo Chicken Fingers

Very good for a healthy, low fat dish. In response to the many reviewers who slathered them in butter to make them taste better, doesn't that defeat the purpose of making a healthy version of fried chicken fingers? I think they're good just the way they are. The amount of heat is a personal preference...you can always add more red pepper to suit your taste.

Cheese Dipping Sauce

I really didn't care for this sauce. I followed the directions, but cut back on the salt per other reviewers' suggestions. It somehow didn't taste cheesy enough. I think the ratio of cheese to milk should have been more. I added some sliced jalapenos, but that didn't really help. Won't make again.
