French Silk Frosting

Reviewed: Apr. 23, 2012
This frosting is smooth, silky and delicious! It's very easy to make, and it makes enough to generously frost and fill a 9-inch layer cake. The best thing about this frosting is that it's stiff enough use for piping decorations.

Grilled Sweet Italian Chicken Sausage with Tomato Cream Sauce Over Linguine

Reviewed: Apr. 21, 2012
I made a double recipe using three 12-oz. packages of sausage. The sauce was a little thin, but tasted very good. If I make this again, I'll mix the linguine with the sauce and let it sit a while so the linguine soaks up the sauce. I served this with homemade baguettes and a tossed salad. My family enjoyed it.

Chef John's Shepherd's Pie

Reviewed: Apr. 21, 2012
Very easy to make, and tasted great. The potatoes were very creamy and flavorful, even with no butter added. The recipe didn't say when to add the salt and pepper, so I added it to the meat mixture. I also salted the water that I boiled the potatoes in. I wasn't sure what size casserole dish to use, but my 2-quart oval casserole worked perfectly. This is a great recipe for a quick, inexpensive meal. I'd like to try it using ground lamb also.

Chef John's Buttermilk Biscuits

Reviewed: Apr. 21, 2012
The biscuits rose very high and were tender and flaky. I think freezing the butter made the difference. Delicious!

Cornbread Stuffing with al fresco® Sweet Apple Chicken Sausage

Reviewed: Apr. 15, 2012
I liked the blend of flavors in this stuffing. The apple and cranberries added a nice sweetness. I increased the amount of broth to about 2 cups, because I like stuffing to be a little moister. One box of Jiffy cornbread mix made the perfect amount of cornbread. Good recipe.

Sour Cream Coffee Cake

Reviewed: Apr. 14, 2012
10 Stars!! Excellent, excellent recipe. I agree w/other reviewers that a 9x13-inch pan seemed too large, and that the batter was very thick and hard to spread (especially the top layer), but I followed the recipe exactly as written (except for the baking time) and the cake came out perfect. It was very moist and delicious. Some reviewers said the cake was dry, which might be because they over-baked it; 40 minutes is probably way too long. My cake was done in only 30 minutes. My mom used to make a similar cake using a box cake mix, but I think this recipe is much, much better. I avoid using box mixes, because I don't like that box-mix taste. I'm sure I'll make this recipe often. It's fantastic!!!!

Potato Coffee Cake

Reviewed: Apr. 7, 2012
I made the recipe as directed, but I had to mix the ingredients with a spatula during the first few minutes in the bread machine because the flour was just sitting on top, probably because of the potato mixture. I wasn't sure when to add the potato mixture, so I added it after the wet ingredients. I only had to let it rise 45 minutes in a warm oven. Wonderful texture and flavor, and not too sweet. It smelled so good while baking, that I couldn't wait for it to cool to have some, so I ate a piece warm with butter on it. Delicious! Tastes a lot like Hawaiian bread.

Simple White Cake

Reviewed: Apr. 1, 2012
I made a double recipe because I wanted a 9-inch layer cake. I'm a very experienced baker, and I found this cake to be heavy and dry. My husband commented that it was like a pound cake...I think he was being kind. Maybe using cake flour instead of all-purpose flour would have helped. In the future, I'm going to stick with my trusted Bonnie Butter Cake recipe for white cake. It's moist, light and delicious.

Mom's Macaroni and Cheese

Reviewed: Mar. 27, 2012
This is the first time I ever made homemade mac and cheese, and it was a hit. I was lucky to get a small taste, because my husband and son polished off the rest in no time. It was very creamy and cheesy. I used 1-1/2 cup of Cheddar cheese and no processed cheese, and I increased the amount of bread crumb/butter on top. Delicious! I'm sure I'll make this again.

Chunky Cheesecake Brownies

Reviewed: Mar. 11, 2012
Excellent! I melted the chocolate and butter together in the microwave on a reduced power, and it worked out well. I also added 1/2 teaspoon vanilla to the cream cheese mixture. The only other change I would make would be to use mini semisweet chocolate chips in the cream cheese filling. I served my husband a piece, and he served himself another piece later. For my husband to actually get up from his Lazyboy and cut himself a piece proves he really must have loved them....LOL. This recipe is definitely a keeper.

Lemon Garlic Tilapia

Reviewed: Mar. 9, 2012
I made 2 lbs. tilapia (10 fillets). I doubled all the other ingredients, mixed them together, and added about 1 Tbs. olive oil, 1/2 tsp. salt and a dash of ground red pepper. I dipped the tilapia in the mixture to coat both sides, and baked on a foil-lined cookie sheet sprayed w/Pam at 375 for 18 minutes. The fish was perfectly done and flakey. I agree that 30 minutes is probably way too long.

Fruit Cocktail Cake VII

Reviewed: Feb. 25, 2012
My mom used to make a cake similar to this. I don't have her recipe, but this tastes very similar to what I remember. I added 1/2 tsp. salt to the dry ingredients and sprinkled about 1/4 cup chopped pecans on top after pouring on the topping. It was done in 25 minutes. Very good, moist cake. The texture is more like bread pudding than cake. My family liked it.

Muffuletta Pinwheels

Reviewed: Feb. 19, 2012
Fantastic recipe! I cut the recipe in half, using 3 tortillas and one 8-oz. cream cheese, but I used almost 1/4 pound each of the meats and cheeses and about 3/4 of a 16-oz. jar of store-bought muffuletta salad (olive salad). Like I always do when making pinwheels, I cut the rounded edges off the tortillas to make them square before I spread on the cream cheese so there's less waste. These were very quick and easy to make and tasted great....a lot like a muffuletta sandwich, but less filling. My guests loved them.

Easy Cardamom Bread

Reviewed: Feb. 12, 2012
I made the dough in my bread machine, but formed and baked it as directed. The dough came out great; easy to work with, nice texture, and good taste. I spread on the full 1/2 cup butter, but I agree w/a previous reviewer that it's way too much. 1/4 cup butter would be more than enough. Also, although I really like cardamom, I found it very overpowering to the point of making the bread bitter. I would cut way back on the cardamom also.

Oatmeal Peanut Butter Cookies III

Reviewed: Feb. 8, 2012
The batter was very soft, which made the cookies a little difficult to form. I was afraid they wouldn't bake well, but they actually did. They spread out and puffed up quite a bit in the oven, but cooled nice and flat. They were easy to sandwich together and tasted a lot like Girl Scout cookies, but fresher. Good recipe!

Fiber One® Chocolate-Peanut Butter Haystacks

Reviewed: Feb. 8, 2012
I'm glad I only made half a batch. Very quick and easy to make, but my family didn't care for them too much. I used semisweet chocolate chips, as directed. Maybe milk chocolate or white chips would have been better. I think it would have been a good idea to add raisins to make them a little sweeter. I won't be making these again, since they've been sitting on the table for a few days and no one is eating them.
