Today was a "snow" day for us in Houston. It never did snow but we did get a pretty good icing last night and early this morning so the city was pretty much shut down and for the most part the smarter folks stayed home. I tried a new recipe from allrecipes for a potato soup but, in… MORE

Slow Cooker Texas Pulled Pork
This had to be the most amazing pulled pork I've ever made. I used 2 lbs of pork tendlerloin instead of the 4lb pork roast. I left the rest of the ingredient amounts the same. To make it even a little easier I used frozen chopped onions instead of chopping my own. This was so, so tasty and will become very regular in our menus.

Pretty Chicken Marinade
We have made this chicken a couple of times since I discovered this recipe. This makes some of the best grilled chicken ever. I usually make a double batch of the recipe so that we can marinade the chicken, have enough to baste the chicken while it cooks and then some for dipping at the table. Awesome!

Traci's Chicken Noodle Casserole
This casserole was awesome! After reading a few reviews I altered it slightly. First I didn't have tme to let it sit overnight so I pan fried the chicken with garlic salt and pepper in EVOO. After the chicken was done I cooked the onion in the pan drippings from the chicken. I cooked the pasta according to package directions. I used a can of cream of celery and a can of cream of chicken in place of 2 cups cream of celery. I also had some half and half I needed to use up so used that in place of milk. Mixed all ingredients together and baked for 30 minutes at 350 degrees until heated through and the cheese was melted.
