J.P.'s Big Daddy Biscuits

Reviewed: Dec. 16, 2012
These were excellent. I ran out of my standard baking mix and tried this recipe. Excellent. I made a second batch and experimented with buttermilk in place of milk and some seasonings added. It worked!

Crispy Herb Baked Chicken

Reviewed: Jun. 18, 2012
I have made this many times and actually got the recipe off a back of a box. I have found the brand of the potato flakes determines if it is mushy or not. "Potato Bud" name for a major manufacturer work great.

Candied Sweet Potatoes

Reviewed: Nov. 25, 2011
Excellent! I did cut back on the butter and sugar by 50% after reading previous reviews. I normally do not alter the recipe on the 1st try. This was a total hit. It was not to sweet and lots of compliments. I did add some toasted pecans as a garnish

Easy Mexican Casserole

Reviewed: Feb. 27, 2011
I made this recipe as written. I did not care for it. It was a bit expensive to make and the flavors did not blend. It might be better with alterations as others have reviewed and rated high but as written I will not make again.

Hash Brown Egg Bake

Reviewed: Jan. 30, 2011
I have made many egg casseroles and had a difficult time with this as I was tempted to add more ingredients. I made this recipe true to the original with one exception. The hashbrowns I used were shredded and 26 ounces. ( that was all I had on hand) I also used the pre cooked bacon. It was great. The simplicity of the recipe added to the goodness. It was not overwhelmed with to many ingredients. You can add peppers, mushrooms.....but it is great as is. Everyone had seconds and good things to say about it. The simplicity had no-one picking out ingredients they did not like. Salsa on top can always add a bite at the end when adding the final cheese.

Stabilized Whipped Cream Icing

Reviewed: Jan. 30, 2011
I had great success with this recipe. I made this true so there were no variations. I doubled the recipe so it would work on a 9X13 cake. My cake was extra sweet with caramel and candy so this topping was a great compliment as it was not too sweet. You can add extra sugar if it is warranted. I was very happy it held up for my gift the next day!

Crisp Sugar Cookies

Reviewed: Dec. 18, 2010
Perfect Recipe for old fashioned sugar cookies. I doubled the recipe and burnt up the motor in my 325 watt Kitchen Aid mixer. Now I have a 600 watt. I glazed the cookies with egg white wash and sprinkled Xmas sugars. I made the recipe as written and it rolled out wonderful. I struggled with cut outs for many years. These are light, crispy and good!

Chocolate Pecan Sandies

Reviewed: Dec. 17, 2010
I made these today and they turned out great! This is a keeper, I followed the recipe as written. I thought the dough was a bit loose so I chilled for an hour before forming my balls.

Magic Cookie Bars II

Reviewed: Dec. 16, 2010
This is very rich but good. I never rate a recipe unless it is as written. This is excellent. I have tweaked and this is always my last baking of the holiday season as I use all of my partial packages of chips and coconut. This year, I used semi sweet chocolate chips as written and split white chocolate and cherry chips for the remainder. It was a hit. Cut small bars as these are rich and a little go's a long way! I used a pizza cutter when they were still slightly warm and then finished the cutting after they were chilled.

Cranberry Orange Cookies

Reviewed: Dec. 16, 2010
This is a wonderful holiday cookie. I made this recipe as written. If you are dribbling the frosting, you can cut that in 1/2. I think that cranberry juice as an alternative to the orange juice would be just as good in the frosting. It was great!

Gourmet Sweet Potato Classic

Reviewed: Dec. 2, 2010
This was excellent. I made it as directed with one exception and that was decreasing the sugar. I think it also depends on the size of your potatoes used. I will definitly make again!

Whole Wheat Banana Nut Bread

Reviewed: Nov. 23, 2010
I made this recipe true to the original only using the applesauce for health reasons as an option that was suggested. I resisted the temptation to Dr. it with additional spices. This was totally wonderful as written and I would not change a thing. I am excited to find a very good healthy bread recipe.

Cranberry Sauce

Reviewed: Nov. 23, 2010
Excellent and a lesson learned for others. I was multitasking while making this with a loose lid for spatters. It overflowed! I also saved 1/8 of a cup of cranberry sauce after pouring in mold, blended an 8 oz pkg of cream cheese in the same pan while warm and made a great spread for bagels, bread........

Coconut Pecan Cake

This recipe was wonderful. I made as directed. I did toss out the question on this site regarding the increase of an egg and oil using a cake mix as I had doubts but it was wonderful!

Spicy Baked Sweet Potato Fries

Reviewed: Aug. 30, 2010
I loved these. I prepared the fries chip style using my mandolin. I read alot of reviews so elected to toss in olive oil and then sprinkled 1/2 with plain salt and pepper and the other half with cajun seasoning since that is what I had. I cooked at 400 degree oven and put fries on sprayed foil on the sheet to save me some labor. they took 40 minutes and were crunchy and soft in the middle. Wonderful!

Spaghetti Squash I

Reviewed: Aug. 28, 2010
I am on the South Beach Diet and found this recipe was a total fit. I chose to add additional vegatables (mushrooms, green pepper & zuccini thinly sliced to the onions. I doubled the squash and fed the family. Normally I review the original recipe but this worked a I needed to have more vegys at this time. It was great and you can expand as I did.
