Pierogi Casserole

This recipe would be a dream come true if not for one thing. I did try it as is just to be sure but my Polish guilt forced me to make a second batch at the same time using real pierogi dough. I know it's much more filling, but it's worth it to whip the dough up yourself. I think mine is somewhere in the ballpark of 3 medium pastered eggs, a cup of sour cream, + or - 3 cups of flour, TBSP of baking powder, and a few pinches of salt. Make a well and generally proceed as though you were making lasagna. I can definitely see myself using this time saver instead of pinching dumplings all day. Thanks for the thought. How did this never occur to me?

Home Made Top Tarts!

I've been making homemade pop tarts for years. Smitten Kitchen has a recipe for the dough published that adds egg to the dough that really knocks these out of the park. "regular" pie crusts are awesome in a pinch but I think you'll be surprised if you try it. Instead of jam which is rather loose for this sort of thing, go for fruit concentrates or heat and thicken the jam with a bit of corn starch. Nut butters make another really great filler for these and avoid all the unnecessary sugar from the frosting. A light dusting of sugar gets the job done.

Japanese Soup with Tofu and Mushrooms

Oh so good. We don't eat un-fermented soy so I substituted tiny pork strips for the tofu. Thanks so much for a recipe everyone in the house loves!!

Chocolate Wontons

My kids are crazy for this recipe. So far I've tried strawberries and banana and both are perfect. Next time, I'm going to try baking instead of frying. I'll let you know. In the meantime thanks for a great snack.

Creamy Almond Butter with Honey

Everyone in the house really liked this recipe as soon as I found a way to use it. It's perfect in homemade pop tarts, stuffed cookies and folded into sweetbreads before baking. After trying quite a few different proportions of oil and honey and even a few tricks I have up my sleeve for my peanut butter recipe, I still couldn't get a spreadable result I was happy with though.

A slightly different twist on Beef Stroganoff

A good 4 as is. The second time I made it I altered it a bit for our tastes and brought it to what my family judges a 5. Loose the canned broth and use 15 ounces of homemade stock. Use porchini or morels for more of a mushroom flavor or save some cash and stick to the regular but add a ts of wild mushroom powder. Use red wine instead of white and brown a few shallots with the meat.

The Best Rolled Sugar Cookies

Very tasty to my adult palette but the kids complained it wasn't sweet enough. Is anything ever sweet enough for them? In any case, i don't get the kick out of cookie shapes like they do so next time I'll up the sugar.

Sugar Cookie Icing

As is I give it a three. Just a little too loose even though I used gel instead of liquid food coloring. Cut down the liquid, add some almond extract and you got a perfect coating.

Angel Hair Pasta with Garlic Shrimp and Broccoli

Very nice. My only recommendation is to use fresh pasta, broccoli and substitute a portion of the parm with a bit of asiago and havilah for a fuller flavor sauce.

Baked Kale Chips

Localfoodmama took the words right out of my mouth. They go from crispy to burnt in seconds and come out unevenly. I tried other seasonings as well. Sea salt on one batch, onion powder on another. The onion was pretty good but my kids hated them all and the after taste was not all too pleasant. I'm going to try my dehydrator before giving up on this one and see how that goes. I may add them to soup..or something, but not a very good snack item.
