Uglies Even Easier

These were good for something quick and different. I made some with leftover shredded pork and some with chorizo sausage. Used shredded mexican cheese blend on some and goat cheese on others. Favorite was shredded pork with goat cheese. I also divided the flaky biscuit dough in half (layers) and they were just right.

Pumpkin Cheesecake Bars

These are wonderful and I think even better the next day and the day after that if you have any left. I used a 9x13 pan and cooked for 40 minutes like other reviewers suggested. Perfect! Even better with vanilla ice cream. After reading other reviews I renamed them Pumpkin Pie Bars and wouldn't you know my husband said "these taste like Pumpkin cheesecake"!

Chili I

WOW! The chili is simmering on this perfect fall New England day, does life get any better? This will definitely become "my" standard chili recipe - a keeper! I added lime juice, a little molasses and ground dried chipotle pepper to this already complex blend of ingredients and it worked. Also, cut back on sugar and beans - used 2 19 oz. cans. Can't wait to serve it to hubby tonight!
