Asparagus Mushroom Bacon Crustless Quiche

I have to admit that I messed with this recipe a lot, but I would have never thought of combining asparagus, mushrooms and bacon in a quiche. This is how I use up the asparagus that's always leftover because I'm the "only one who likes it!" So I use a can of crescent rolls to line a square, 2-qt baking dish as the crust. Then I fry up the bacon, drain the fat and toss in the chopped leftover asparagus to coat with flavor. I use 6 eggs and 1 can evaporated milk. This has fast become a favorite meal of even the asparagus-hater in the house! Thanks for the inspiration.

Tangerine Cherry Cranberry Sauce

This was a huge hit, even with someone who doesn't like traditions messed with! I was sure he would turn his nose up and wonder where's the cranberry sauce, but he raved about this version. I didn't have a tangerine so I used orange juice and skipped the zest. My only criticism is that by the time the sauce cooked, I couldn't find the cloves to remove. No one else mentioned finding any but I did in a bite of intense clovey-ness. I think next time I may use ground clove to avoid that issue. But thanks Chef John for another fabulous recipe that's now a permanent addition to my holiday table!

Spicy Pumpkin and Sweet Potato Soup

OMG this recipe was exactly what I was looking for. I didn't have a pumpkin but did have most of a can of puree leftover that I wanted to use up. Also didn't have most of the whole spices but did have ground versions and it all came together in a melange of orange deliciousness. I ate almost half the pot by myself, topped with crisp bacon and blue cheese crumbles as I'd seen recommended in a similar recipe. This one is definitely a keeper and I can't wait to see how the flavors have developed when I have the rest of it for dinner tonight!

Spicy Chicken Thai Soup

I went the quick and easy route and used prepared lemongrass, garlic and ginger and only 1 can of coconut milk. This soup is WONDERFUL and I know I'll make it again and again.

Roasted Broccoli

I love it on meat, but I found the steak seasoning too salty for vegetables. I'm using the concept of roasting seasoned veggies with olive oil in many combinations now and love that it's a quick and easy way to make a healthy side dish whenever I'm using the oven for a main dish. Cauliflower, broccoli, carrots, onions, and blood-orange-infused grapeseed oil is my current favorite. Thanks for the basic idea!

Eggplant Supper Soup

I love eggplant and always look for more ways to use it. I'm trying to keep carbs low so I skipped the macaroni and sugar, but this is excellent! I've also experimented using ground turkey instead of beef and I think half turkey and half beef is a pretty good compromise.

Sausage Casserole

Make this, you won't be sorry! Yes, use 4 cups frozen hash brown potatoes, and I added canned green chilis and some piquant peppers (chopped) from the grocery store salad bar that I wanted to use up. OMG ... two of us ate half the recipe for dinner last night and now I'm seriously considering having more for breakfast.

Kale and Feta Salad

I skipped the salt but I'd rate this 5 stars for the kale massaging idea alone! Like other reviewers, I used what I had on hand and am happy to report that chopped walnuts and dried cherries are terrific with the kale and feta. I also added some blood-orange olive oil (a favorite of mine) and have made this salad three times in the past week. Even my kale-resistant other-half didn't complain :-)

Easy Caramelized Onion Pork Chops

I'm not a big pork chop fan but this was very simple to make and DELICIOUS. I did caramelize the onions before adding the water but this recipe is definitely a keeper!

Sweet and Oh So Spicy Kielbasa

I made a half batch as a trial run before a holiday pot luck figuring I'd add it to the final if I liked it. I kept tasting, and tasting, and before I knew it, it was gone! The second batch, I used half ketchup and half bbq sauce and thought that was less cloying. Also used fresh pineapple chunks instead of canned. YUM!

Sweet, Salty, Spicy Party Nuts

I wanted to replace the intensely sugary spiced pecans I always make as Christmas gifts and tried this recipe. I was concerned that friends would be disappointed with a healthier gift, but not for long. These were a HUGE hit! Initially I thought they needed more spice but the second batch I did add more and now I'm back to the original mix. I DO add an extra cup of nuts, filberts and macadamias, because there's plenty of syrup to coat more. This will become my new holiday tradition!

Savory Swiss Chard with Portobellos

The best swiss chard recipe I've tried! Even my husband who doesn't like veggies thought this was great. Baby bella mushrooms also work well in place of portabellos. One variation I've tried and also love is using chopped zucchini and summer squash with some diced orange peppers in place of the chard.

Capers and Halibut

This is by far the best and easiest treatment for any firm white fish I've ever tasted, much less prepared myself at home! I'm from New England and fairly picky about seafood but I wouldn't feel cheated if I was charged handsomely for this dish at a restaurant. The good part is I can make it at home anytime I can get fresh fish at the market!

Thai Quivering Tenderloins

OMG ... I followed the recipe as written, only substituting Splenda brown sugar, and I've never had better tenderloin! I could drink the marinade with a straw. I would serve this to company without reservation, but it's easy enough that it also makes a great mid-week treat.
