Chicken Fajita Marinade

Very good recipe! I doubled the ingredients for the marinade. As I made this on a 25 below zero winter night in Chicago, I cooked the chicken indoors in a skillet. I added onions and green pepper strips and the marinade once the chicken was cooked thru. Boiled the marinade and cooked until the onions and pepper strips were cooked. Delicious!

Pumpkin Cookies V

Excellent cookie! Didn't deviate at all from the recipe, but did follow advice to "flatten" the cookie out of the oven to make the frosting process easier. The cookies were very moist and "cakey" and got the sweetness from the icing. Will definitely make these again! Thank you Peggy!

Guinness® Corned Beef

My husband and I love reuben sandwiches, so we tried this recipe (followed it completely), made it one day, let it keep in the refrigerator until the next day, then used the meaty chunks of brisket on the reubens. TO DIE FOR!! Thank you for sharing this recipe!

Southern Style Fried Okra

Slow Cooker Chicken Stroganoff

The basic recipe was very good, but turned out excellent with just a couple of modifications. My family likes saucy stroganoff, so I doubled all ingredients except the chicken (but used 4 large boneless skinless breasts). I used neufchatel lower fat cream cheese and fat free chicken soup. I added one cup of chardonnay to the chicken, margarine and italian dressing mix at the onset. This is a keeper! Thank you!!

Quick Tuna Casserole

Very good recipe! I had to "tweak" it somewhat out of necessity. I didn't have a 9 oz. can of tuna on hand, so I used 2- 5oz. can of Bumblebee sensations tuna. I also used 98% fat free cream of mushroom soup. A very economical and hearty comfort food!

Easy Garlic Chicken

Very good recipe. I took the advice of other reviewers and added grated parmesan. I made a big mistake, though and only used regular breadcrumbs, not seasoned, so it was kinda bland. I will definitely make this recipe again, though. Thanks for sharing!

Chicken Breasts with Balsamic Vinegar and Garlic

If there were more than 5 stars, I would give it to this recipe. My husband flours the chicken and cooks is totally thru. He removes the chicke from the skillet and makes the sauce. We like to serve it on rice, so we double the sauce ingredients. Thanks Colleen for a GREAT recipe!

Roasted Brussels Sprouts

This was an amazing dish! I have prepared it the last two Thanksgivings and made the mistake the first year of not cooking it long enough. I think the key to this dish is to cook it long enough until the sprouts are tender and browned. My son in law even tried this and had seconds. Thank you for a great recipe.

Baked Ziti with Sausage

Really good recipe! Used lowfat ricotta cheese and rinsed the Italian sausage to try to remove some fat. Also used hot Italian sausage to give it a little kick!

This is a delicious recipe. I omit the cheese and wrap a 1/3 slice of uncooked bacon around a mostly thawed tot! Comes out perfect.

Fried Okra

We were craving okra after a motorcycle trip down south. This recipe was awesome. I took the advice of other reviewers and added flour to the cornmeal and cooked the okra in a deep fryer. We will definitely make this again!

We followed the recipe exactly as written. It wasn't bad. I don't think the sour cream added much, next time we'll try it with low fat ricotta. I will say, though, that it tasted better the next day as leftovers.

Ramen Noodle Salad

I made this salad at the request of my 19 year old son, who loves ramen (like many college students!) The only change I made was to use fat free mayonnaise instead of regular mayo. It was great - my family loved it. Thank you!

Shrimp Scampi III

During Lent we are always looking for tasty seafood recipes and we found one here! My husband prepared this on Friday and the only changes he made to the recipe was to substitute 1/2 cup Smart Balance(stick form) for the butter and added a little more garlic. It was very rich and delicious. Would definitely recommend this recipe!

Swiss Chicken Casserole II

My dear husband made this for dinner the other night. He lightened up the recipe by using reduced fat swiss slices, 1% milk and smart balance sticks. He said preparation was a snap and the results were great!
