Refreshing Sweet and Spicy Jicama Salad (Vegan)

This is GREAT! Crunchy and fresh, and perfect with a warm spicy dish, or it would be great with some grilled chicken for a summer dinner. I did add fresh grated citrus zest on top and that made it. We couldn't find the Thai chiles and substituted all jalapeno. Also, don't skimp on the black pepper! This is SPICY - not for the tame palate.

Eggplant and Ground Beef Lasagna

changes made: replaced noodles completely with eggplant. left out mushrooms (only because i let them go bad. i confess.) doubled fresh garlic. replaced ground beef with ground sausage. all VERY good. i DO recommend using the sauce as directed - it's so easy and way better than jar sauce.

1-2-3 Jambalaya

I'm not a rice girl, but my family is; I AM a Creole-Cajun-Anything-Blackened girl. I enjoyed this meal right along with them! Our grocery didn't carry the Johnsonville Andouille so we subbed in Italian and it worked just fine! We're a family of 7; we doubled the recipe and will have plenty of leftovers for lunch tomorrow!

Greek Salad with Spinach & Feta Chicken Sausage

this is without a doubt a new favorite. we had to substitute al fresco sweet italian as the spinach and feta wasn't available. we also made our own greek dressing (a simple affair with olive oil, red wine vinegar, oregano, garlic, and sea salt/fresh cracked pepper). a summer repeat, and repeat, and repeat...

Chipotle, Beer, and Lime Roasted Pork Tenderloin

This sounded amazing, and I wish it had been. It was a very good flavor for marinade, but for some reason, it was still tough and even a bit dry. I will watch more closely next time as we may have overcooked. The leftovers with tacos sound awesome!

Fruit Salsa

this is SO GOOD that we actually made it two nights in a row! use sea salt instead of garlic salt. :) oh, and hand-chop your ingredients, then pulse HALF in the processor, for a chunkier, fresher flavor. THIS is summer-in-a-bowl. now to perfect my homemade grain-free tortilla chips...

Summer Tomato Casserole

this is delicious! it is, as the other readers said, very wet, but who can complain about summer-tomato juicy-ness with sharp cheddar (yes, use sharp!). we used the home-made mayo recipe here and it was a true taste of summer. i suspect this would also "beef up" the taste of less-than-delicious tomatoes, which unfortunately is sometimes how they come from the grocery...

Real Sopapillas

i was glad i was a "good girl" all day because i lost all control when it came time to eat these! two hints: be sure your oil is good and hot or your sopapillas will sink, take too long to rise, and be too oily. also we found cutting the squares a bit smaller (use a pizza roller!) made the perfect little pocket to fill with honey. YUM!

this was delicious! here's a tip: to save time, use a bag of pre-sliced pepper-and-onion blend (ours is called pepper and onion stir fry). i keep bags in the freezer all the time because they don't go bad quickly, and they're super convenient in all sorts of recipes. in this case, they can replace the pepper and onion.

Sugar Cream Pie V

If I could give this 25 stars, I would. I've been grain and sugar free all week, and I chose this pie to break my "fast," and celebrate this weekend. Rich and creamy, silky and buttery, it is worth every.single.calorie. of the 541 per serving. Be SURE to use real, high-quality vanilla, real butter (salted gives it the perfect touch), and best, grate fresh nutmeg over the top. Absolutely divine - THANK YOU, Glenda, for sharing!
