Rosemary Lemon Margarita

This was delicious - very refreshing. Our tweaks based on reviews and preference: doubled the recipe to serve four. Used confectioner's sugar to dissolve quickly. Next time, I'd steep the tequila with the rosemary for an hour before making this - although my guests said they could, this herb-lover couldn't taste it in the drink, and I look forward to doing so next time!

Eggplant and Ground Beef Lasagna

changes made: replaced noodles completely with eggplant. left out mushrooms (only because i let them go bad. i confess.) doubled fresh garlic. replaced ground beef with ground sausage. all VERY good. i DO recommend using the sauce as directed - it's so easy and way better than jar sauce.

1-2-3 Jambalaya

I'm not a rice girl, but my family is; I AM a Creole-Cajun-Anything-Blackened girl. I enjoyed this meal right along with them! Our grocery didn't carry the Johnsonville Andouille so we subbed in Italian and it worked just fine! We're a family of 7; we doubled the recipe and will have plenty of leftovers for lunch tomorrow!

Limehouse Chicken

We made some substantial alterations to fit our schedule. We placed chicken legs (not thighs) in crockpot and drizzled with lime, salt, paprika, olive (not vegetable) oil, 2 T coconut (not brown) sugar, and1/4 cup each wine and broth. After cooking on low 6 hours, we transferred to a roaster and roasted for fifteen minutes at 400 degrees to crisp the skin. Before serving, we drizzled with lime juice and sprinkled with lime zest, leaving off the mint at others' suggestions. DELICIOUS.

Roasted Asparagus with Parmesan

I used a sea-salt-garlic grinder instead of the garlic powder, and real olive oil instead of the spray. It was good, but lacking something. Next time we will drizzle with fresh lemon juice straight out of the oven - I think a bit of acid will make it "pop!"

Smoked Salmon Deviled Eggs

this is delicious. we love dill, and i am glad we used the full recommended measure. i used grainy mustard and garnished with ultra-thin lemon slices. next time i might add a sprig of fresh dill, also! this joined grain-free cinnamon rolls (i'll submit the recipe!), and fresh hot coffee, along with mimosas, for the perfect brunch-with-friends!

Shrimp Dip

I've been making a variation of this since I was first married... it's so simple and it's so good!!! Who needs a cracker? :) This does make a LOT, so halve it or invite a crowd to share! I will also say that I thought it needed just the littlest bit more PUNCH... next time I'm putting in half a teaspoon of horseradish.
