Broccolini with Seasoned Butter

Substituted broccoli - but will try the broccoline since I have a recipe now. Used the Lemon-Pepper/Dill version and it was really tasty. AND - it was quick and easy!

Navy Bean Soup I

My husband and I nearly ate all of this in one sitting. I had to substitute based on what I had on hand - so 1 can of chicken broth instead of adding chicken boullion. I added carrots and couple of dashes of hot sauce. Fixed in the crock pot and served with Jiffy cornbread. Thanks for contribution - cannot wait to have it again.

Fruited Curry Chicken Salad

This was really great. I also added the honey to the recipe. I did some substitutions for some of the veggies - like adding red peppers. I think that's what makes this recipe a good base for what you have in your frig.

Awesome Slow Cooker Pot Roast

This recipe was tasty and received rave reviews from the family. The only thing I did wrong was use the low sodium soup. We just ended up adding more salt from the shaker - so it was worse than just using the real soup. In short, the salt is an essential ingredient for taste.

Absolutely The Best Shrimp Scampi

I could not believe how good this was. Here's a few tips: This recipe goes really quick - have all your ingredients pre-measured and ready to go. This will not produce a lot of sauce so you may want to plan to have it "with" instead of "over" something. I think I should have made rice pilaf or something that would not compete with the main dish.

Brown Sugar Sauce

Used the cream as suggested. I really couldn't serve this because I kept sneaking a taste and there almost was not enough left. :-) It's really wonderful and I think it would be okay without the brandy if you don't have that on hand.

Black Bean Hummus

Very good as "base" or other additions! I read several on the web and this seems like the "base" ingredients for all of them. I also substituted the reserved bean juice with olive oil and the lemon juice with lime. Rave reviews from DH. Next time I may add some jalapenos just too keep it interesting!

Spicy Cilantro Dressing

I only used 1 whole jalapeno .... woo baby!!! I actually like hot food and I think it had the right amount of heat when put on food. This is a keeper. I sub the mayo with Olive oil and there did not seem to be any difference in flavor. I think the jalapeno dominated somewhat.

Spicy Peach-Glazed Pork Chops

Substitutes: Sugar Free Apricot preserves in place of Peach preserves and red pepper flakes in place of chili paste. This was really tasty, simple, and quick. It has an Asian flavor to it. I served Herb Buttered broccoli and sliced tomatos with it. I should have taken a photo because all the colors gave it a nice presentation. We both loved it so I will make it again. I would even consider this a nice enough recipe to serve to company.

French Onion Soup VIII

Really good. Onions caramelized in 30 mins. I substituted red wine and added thyme as suggested by another reviewer. The soup was really wonderful and my husband asked me to make it again. I only had whole wheat bread - which was a horrible substitute. I agree this really only serves 2 people. ( Also! Make sure you have bowls to put under the broiler before you make!)

Aunt Jewel's Chicken Dressing Casserole

As suggested by some other reviewers, I also added some seasonings to the chicken when cooking so I could have some chicken stock for other recipes. I've tried this with the cornbread and regular stuffing and the cornbread stuffing just "kicks it up a notch".

Suzy's Mashed Red Potatoes

These had a good taste. I did warm the milk - but I added too much. I didn't quiet use 2 lbs of potatoes thus I didn't need as much milk. So my advice to myself and to you is to add the milk until you get the consistency you are seeking.
