Bay Scallops with Garlic Parsley Butter Sauce

I bought fresh/frozen bay scallops, .89 lb. I took them out of the freezer for about 15 minutes before throwing them in the hot oil, so they weren't completely thawed. I used 2T olive oil and I never let my oil reach its smoke point because I think it makes it bitter and is probably unhealthy. I left my scallops unturned for a little longer than recommended because they were frozen. Otherwise I followed the directions exactly (but I did use 1/4 cup butter instead of 4T, because I read the recipe wrong and it still came out great. you can't make scallops too buttery, right?! I used Naked Cow Dairy Honey Butter because it is incredible and made locally on Oahu where I live. I supplemented this to a faux-fredo sauce made from cauliflower and spooned over whole wheat fettuccine. it was yummy. It added some depth to my kind of bland faux-fredo, which will receive more herbs and nutritional yeast next time. Over all this was super easy and quick to make even with frozen bay scallops and they came out wonderfully! next time I might try adding clams, mushrooms and asparagus -I think that would meld nicely.

Banana Sour Cream Bread

I had to change this recipe slightly, so I give it 4 stars. The way I made it came out spectacular, so I saved a custom private copy to my recipe box. This recipe yields 2 loaves if you use an 8x4 or larger loaf pan. I increased the temp to 325 degrees Fahrenheit, and increase the cook time by 15 extra minutes. I covered the bread with aluminum foil for the last additional 15 minutes to prevent the top from burning. Also I didn't quite have 16 oz of sour cream so I used 8 oz sour cream and 8 oz vanilla yogurt, roughly. I eyeballed this ingredient amount. Great recipe thanks you!

Jennie's Heavenly Slow Cooker Chicken

Used a papaya seed dressing to give it some zing and chicken stock instead of white cooking wine. Cut the chicken breast halves in half and they came out very tender. Great recipe

Tzatziki Sauce II

I think this came out well, and I added it to salads and sandwiches too. I used greek yogurt and I blended it til smooth. I might use a little less mint next time but I added more than the recipe called for. Great for my lamb and chicken gyros!! :)

cooked them for 40 minutes stirring them up 20 min and before serving, tripled the amount of honey. added them to a candied kielbasa recipe from this site by BUCHko and added canned green beans.

came out great, i dipped the chicken in egg before rolling it in bread crumbs, and i added garlic salt and onion powder and paprika to the bread crumbs. next time would add onion powder to the cream sauce too but it was delish the way it came out either way

Chicken Cordon Bleu II

This time I breaded them, like other reviews recommended. I coated it with egg and breading, rolled the Swiss and ham up and secured with a toothpick, and browned on. Both sides before baking. I made 3 breasts but left the amt for the sauce for 6, and used it for sauce over fettuccini with my chicken. Sided with honey walnut green beans, everyone raved about it! The sauce seemed really bland, I used chicken stock instead of wine... and added adobo seasoning, added plenty of shredded cheddar, some basil, salt, onion and garlic powder. I needed to add more cornstarch because Iwanted it thicker faster. Will edit and save this recipe as a go to dinner menu item

Creamy Scallop Chowder

I was going to GIVE UP on ever cooking with scallops again! everything I tried had been a complete flop! but this renewed my faith in scallops, I used bay scallops and I ate the whole dish myself, even though I had promised my husband he could take some to work with him! I couldn't help myself. :)
