Chicken Breasts with Lime Sauce

Reviewed: Aug. 21, 2014
I couldn't help but take a picture of this and add it to the others. I added more lime (because I love it) and totally used this amount of butter. It's not like we eat this richly every day, and even though using chicken broth is also a great idea, I'm a fan of Julia Child's quote "With enough butter, anything is good." This was a treat! Thank you, SMLUCY (or rather SMLFISH) :)

Ham and Cheese Omelet Casserole

Reviewed: Oct. 2, 2013
I phone my elderly Mom three times a week after work. I was able to whip this supper up quickly after work, and while it baked, I was able to talk to her, knowing supper was well on its way! I used 9 medium eggs, sharp grated cheddar, and chopped up a ham steak (with a bit left over to save for something else). It doesn't need much salt because of the ham and cheese, and it was very flavourful! I took Peggy's suggestion, and we had it with hash browns. Thank you!

Slow Cooker Enchiladas

Reviewed: Aug. 7, 2013
I really enjoyed this recipe! My picture didn't look that pretty, but the taste was very good! Loved being able to make a favourite dish like this in the crockpot! Thanks, Aims!

Bacon Crackers

Reviewed: Feb. 21, 2012
Totally did not expect the wonderful taste of the cracker after the bacon and Brown Sugar had melded in the oven. Oh my. I ate one before I took them to a party, and then I ate another, and it was all I could do to stay home and eat 'em all! Really enjoyed how the bacon and brown sugar worked together on the cracker, and I used about a half a teaspoon of the brown sugar on each piece of bacon. If you love bacon and snacks, you've gotta try this! Thanks, Gayle.

Grandma Daly's Tuna and Tater Casserole

Reviewed: Feb. 12, 2012
I nearly passed this by because for some reason potatoes and tuna didn't sound that great. I love tuna though, so I thought I'd add this to my list of new attempts...(bein' used to noodles or biscuits instead of potatoes) :o). I have to say, I'm glad I made this. It took a little longer than the few minutes for the cream mixture to thicken, and you must be a speedy preparer, Janet, but in the end, it was very tasty, and my husband loved it, too! I walked my dog and came home to a lovely aroma in the house. I added a picture because it was worth it! Thanks for posting this, janet7th! I'll definitely make it again!

Bacon for the Family or a Crowd

Reviewed: Aug. 4, 2011
Gee, I thought I invented this! lol Actually, I love this method as well. I use parchment paper, and it works beautifully, too. I love that it makes a lot of bacon at the same time, which as another reviewer mentioned is great for BLT's! It also works well if you want to make some bacon bits for potatoes or salads.

Japanese Chicken Wings

Reviewed: Jul. 14, 2011
These were SO good. I followed the recipe exactly, and yes, I used the butter, and yes, I used the full cup of sugar. It's not like a person is going to eat this every day (although I wouldn't mind!). I wish people would lighten up! At any rate, it was wonderful. I entered a photo, and I'm terribly embarrassed about using frozen mixed veggies as an accompaniment. My husband said the wings were so good, the veggies didn't work! He was right. Thank you for posting this many years ago!

Mama's Asian Chicken and Rice

Reviewed: Jun. 15, 2011
This was simply wonderful. I was surprised at how easy it was to prepare. I only used 2 chicken breasts, and still prepared the same amount of sauce. I didn't need the corn starch since it thickened very well on its own. I didn't have green onions, so I used some chives I had growing in a pot. Wow, this was good. I had wished the meal would go on forever, but unfortunately, one can only eat so much until the next time! ;o) I'm glad I took a picture of my plate before I demolished it! Thank you, Scarlett!

JBK Pottery - Soften Hard Brown Sugar; Prevent Boilovers; Keep Buns Warm; Stamp Cookies; and more!

Reviewed: Jun. 14, 2011
Keeping brown sugar soft is important so when we need it NOW for a recipe such as cookies, marinades, icings, and sauces, we don't have to worry about finding rock hard brown sugar in our pantry! Boiling pasta or potatoes or milk and leaving the room for a 'minute' always results in boilovers, but the Pot Minder solves this when it chatters in the pot to remind you the water or milk is beginning to boil. The Bread Warmer is nice to keep bread and buns warm through a meal. The Cookie Stamps make a cookie festive. These ceramic gadgets are small, inexpensive, and functional.

Juicy Lucy Burgers

Reviewed: May 17, 2010
Oh my. I doubled this since a friend was coming over, and I always have to feed my husband and his brother anyway, so these were the plan! They didn't quite seal tight enough, but it didn't matter. These came out so good and so messy, and I was in hamburger heaven! We used a lot of napkins! I probably took too much time flattening and patting the burger patties and have since learned it's best not to overwork the hamburger or it gets tough, but these were not tough, and the cheese was so melty that as I write this, I think I need to add them to the menu again soon! We had a Caesar Salad with them as well as the normal hamburger fixin's. Thanks, Cooking Mama!

Mediterranean Lemon Chicken

Reviewed: Mar. 12, 2010
I made this as written and thought it was very good. I was having a heck of a time taking the danged skin off the legs (it kept slipping through my hands), and so I did a computer search and found a great idea! It's easy to pull the skin down from the meaty end to the bone end, and then use a paper towel to grasp the skin and yank it off. That hint made it so much easier for me. Very tasty chicken! Thank you!

Hot Buttered Rum Batter

Reviewed: Jul. 30, 2009
I loved this and gave it as gifts to any rum loving friends as well as keeping a lot for myself. I'm glad it makes so much because on cold winter days after work, this is a wonderful hot drink. I used to have a so-so recipe, but now I'll be making this every year!
